Minced pork tofu and vegetables kim chi fried egg with rice

I got kimchi from my sister and have silken tofu, spring onion, black fungus, an egg, and cabbage in my fridge, planning to use them with minced pork for dinner and have some leftovers for later.

“Silken tofu is made by coagulating soy milk without curdling and is unpressed, retaining moisture. It is rich in Omega-3 and Omega-6 fatty acids, vitamins C, A, E, and calcium, but has less calcium than firm tofu. Some doctors recommend that individuals with estrogen-sensitive breast tumours limit soy intake, and those with poor thyroid function should avoid tofu because of its goitrogen content.”

“Silken tofu is pre-cooked and can be consumed raw, cooked, or heated in various ways. It’s commonly used directly from the packet in sauces, dips, and dressings, and can also be boiled, fried, steamed, or baked.” “Pork mince, typically made from pork shoulder and sometimes containing loin trimmings, is often sold pre-ground without fat and lean percentages listed, usually comprising around 15 percent fat.”

“Napa cabbage, originating near Beijing, is a type of Chinese cabbage commonly used in East Asian cuisine and has gained popularity in Europe, the Americas, and Australia since the 20th century. It is rich in vitamins, including C, K, A, and B6, as well as beta-carotene, folate, and calcium.”

Ingredients

Minced pork tofu and vegetables

2 boxes of 500 g silken tofu
380 g minced pork
10 napa cabbage leaves, cut to bite size
15 g black fungus strips, soaked in hot water 30 minutes, reserved water
2 stalks spring onion, cut to bite sized
1 Tbs teriyaki sauce
1 Tbs minced garlic, plus extra

salt
pepper

Minced pork marinade

2 Tsp cornflour
1 1/2 Tsp light soy sauce
1 Tbs oyster sauce
1 Tsp ginger powder
2 Tsp sesame oil
1 Tsp vegetable stock powder
4 Tbs water

Sides and fried egg

kim chi, bought
1 egg
1 Tbs butter
oil
salt
pepper

Method

Minced pork tofu and vegetables

In a large bowl mix the marinade except vegetable stock powder and 4 Tbs water for minced pork until well combined. Add minced pork, tossing it in the marinade and make sure meat are covered. Let stand at room temperature for about 10-15 minutes.

Carefully remove silken tofu out of the package and drain. Transfer the tofu to a chopping board lined with paper towel, pat dry with paper towel and set aside 15 minutes to let some of the excess water come out of the tofu.

Once minced pork stand time up, heat deep pan on medium high heat and add 1 Tbs oil. When the oil is hot, add garlic and fry until fragrant about 30 seconds. Then add the marinated pork and let it brown briefly about 3 minutes. Next add cabbage, black fungus and cook about 3 minutes. Add salt and pepper, toss to mix well until minced pork, and cabbage are cooked and soft.

Now add in marinade sauce, vegetables stock: 1 Tsp vegetable stock powder and 4 Tbs water, black fungus strained and reserved water, and spring onion. Check seasoning. Let simmer for about 5-6 minutes. Switch off hob.

Cook the egg

Place another saucepan over medium heat. Add butter and 1 Tbs oil. Swirl saucepan to coat the bottom. Crack the egg into the saucepan; ensure no shell gets in the pan. Immediately reduce the heat to medium low. Cook until the whites are fully cooked and the yolk is completely set. This can take about 5-6 minutes. Season with salt and pepper to taste. Switch off hob. Move the saucepan away from hob. Leave the egg in saucepan until needed.

Back to minced pork tofu and vegetables

Spoon minced pork and vegetables to a deep plate. Scatter the extra 1 Tbs minced garlic all over the minced pork and vegetables. Next place the two silken tofu on top of minced pork and vegetables. Season with salt and pepper.

Then spoon some minced pork and vegetables on top of silken tofu. Drizzle teriyaki over the tofu and minced pork and vegetables. Then microwave for 1 minute as I don’t like eating tofu too raw. (You don’t have to microwave). Remove from microwave. Check seasoning.

Assemble plate

Spoon enough rice onto bowl, spoon the cooked egg on top of far left of rice, followed by minced pork tofu and vegetables at the top of bowl and rice. Then spoon kim chi onto the top right side of bowl and rice. Enjoy with a glass of white wine!!!
