This year for my birthday, I decided to bake pudding instead of cake. My sister gave me a loaf of sliced pane di casa from the community box that had expired for 5 days. Not wanting to waste it, I made pudding with vanilla custard, craisins, and topped it with ice cream, vanilla custard, and manuka honey.

“”Craisin” is a brand name for dried cranberries, which are tart and usually have added sugar to taste better. Although they provide some benefits from their antioxidants, fiber, vitamins, and minerals, these are lower than in raw cranberries, and dried cranberries have more sugar, carbs, and calories. Cranberries can improve urinary tract, heart, digestive, and oral health because of their antioxidants called proanthocyanidins: help prevent urinary tract infections. The antioxidants and fiber in cranberries: help lower cholesterol and reduce heart disease risks. Their fiber aids digestion and keeps the gut healthy. Cranberries are full of antioxidants: fight oxidative stress: can cause early aging. The vitamins and antioxidants boost the immune system and help fight harmful bacteria. Dried cranberries should be eaten in moderation.”
My pudding is dark golden brown, healthy and delicious. Let’s bake!!!

Ingredients
8-10 stale sliced pane di casa
2 eggs
250 ml vanilla custard
1 1/2 c milk
60 ml orange juice
1/4-1/2 c castor sugar
1 Tsp cinnamon powder
1 Tsp vanilla extract
1/2 -1/3 c dried craisin, divided
20-30 g butter, grease dish
hot boiling water
extra castor sugar (OPT)
Garnish
ice cream
vanilla custard
manuka honey


Method
Soak pane di casa in hot boiling water for 10 minutes. Grease dish with 20 -30 g butter. Preheat oven to 160 degrees C.
Meantime, beat eggs, 1/4 c castor sugar, orange juice, vanilla custard, cinnamon powder, milk and vanilla extract in a jug until well mixed. Now squeezed really dry and tear pane di casa to bite pieces. Place half of pane di casa into the prepared buttered dish. Pressing in tightly. Scatter some craisins over the top of pane di casa.
Repeat with the remaining pane di casa and followed by scattering remaining craisin. Next pour the custard mixture over the pane di casa and craisins. Scatter some more castor sugar on top. Let it sit for 10-15 minutes.
Bake for 30 minutes first. The pudding is still liquid. I had to increase the temperatures to 180 degrees C. Then baked it a further 30 minutes as it didn’t set; I cover with a baking sheet. After second time of further 30 minutes; finally, it set and has dark golden brown. If it brown too quickly, cover with a baking sheet or foil.
Once it’s done. Switched off oven. Let it sit in closed oven for 30 minutes. Removed to rack or plate mats to cool slightly. Cut into pieces and serve with ice cream alone, ice cream and manuka honey, or just with vanilla custard. Enjoy!!!!
Note: Oven temperatures vary. You may omit orange juice. You may not need to soak pane di casa if its not hard rocked. You can butter the pane di casa bread. I didn’t butter it. You can use any fruits of your choice instead of craisin. You can add demerara sugar instead of castor sugar. Adjust the amount of sugar to suit you. You can omit manuka honey use your own caramel sauce or just eat with ice cream, thickened milk or double cream. You can serve hot or warm.
