Crumbed prawn with leek and chopped tomato pasta

Bought a packet of crumbed prawns, plum tomatoes, and leek to go with my leftovers angel hair and bucatini pasta. Today, I am air frying my crumbed prawns. It’s a multi-staking skill.

“Crumbed prawns, also known as breaded prawns, are a seafood dish made by coating peeled and deveined prawns in breadcrumbs and then cooking them, usually by frying or baking. They are often butterflied before being coated in flour, a wet mixture like egg wash, and then breadcrumbs.”

“Bucatini is a thick pasta like spaghetti, featuring a hole in the center for holding sauces. It’s traditional in Rome and the Lazio region of Italy, often used in amatriciana, which includes guanciale, tomato, and pecorino cheese. When paired with vegetables and lean proteins, it makes a balanced meal. Angel hair is a very thin type of Italian pasta, shaped like long strands, and is also known as ‘Capelli d’Angelo.’ It works best with light cream or tomato-based sauces.”

“Leeks are a mild vegetable that tastes sweet and is often used in soups, stews, and casseroles. They can be cooked in many ways, like braising, adding to pasta, or mixing into omelets and risotto. My simple meal is crunchy, healthy, and delicious. Let’s cook!!!

Ingredients

1 packet un cooked crumbed prawns, about 250 g
150 g bucatini
200 g angel hair
4-6 plum tomatoes, chopped
2 leeks, trimmed and sliced
1/2 lemon juice
1/2 c Pinot Grigio (white wine)
6 Tbs cold butter
2-3 Tbs capers
2 -3 Tbs minced garlic
salt
oil
black pepper
water

Method

Cook bucatini in a large pot of boiling salted water until tender about 8 to 12 minutes, stirring occasionally to prevent sticking. Aim for a texture that is firm to the bite, with a slight resistance in the center. Start checking the pasta’s texture a minute or two before the recommended cooking time. Once cooked, drain pasta, and keep warm with tented foil in a large bowl. Next, cook angel hair in a large pot of boiling salted water for about 7 minutes, or until tender. Drain angel hair, reserving 1/4 -1/2 cup of the pasta cooking water if you want a bit wetter. Set aside with tented foil bowl.

Heat a pan with 1 Tbs oil and 1 Tbs butter over medium-high heat. Once butter melted, add 1 Tbs minced garlic and cook until lightly browned. Now add chopped tomatoes and leeks; cook for about 4-5 minutes, stirring often, until softened.

Meanwhile, preheat your air fryer to 200°C. Place the raw crumbed prawns in a single layer in the air fryer basket. You may need to cook them in batches. Lightly spray the prawns with cooking oil for extra crispiness. Cook for about 4-5 minutes. Then flipped over and cook a further 4-5 minutes until crumbed prawns are cooked and have a nice golden colour.

Meantime crumbed prawns are cooking in air fryer. Add the remaining minced garlic, capers, to the leek and tomatoes and cook for 1 minute or just until the garlic becomes fragrant. Once fragrant, add in lemon juice, Pinot Grigio wine, 1/4 c reserved pasta water along with 5 Tbs cold butter. Season with salt and pepper. Simmer the sauce for 2-4 minutes, whisking with balloon whisk until the butter melts in and the sauce slightly reduces.

Next add bucatini, and angel hair into the leek tomatoes mixture. Gently toss everything together to combine and coat. Check for seasoning and if too dry add some more reserved pasta water. Using food clipper or spoon transfer the cooked crumbed prawns over the top of cook pasta. Spoon pasta with vegetables into serving pasta bowls. Then garnish with 4-5 cooked crumbed prawns on top. Enjoy with a glass of white wine!!!!

Note: Dried bucatini is easy to find in the dried pasta section of the supermarket, you can substitute bucatini and angel hair with spaghetti or even linguini. Instead of leek and chopped tomatoes, you can substitute them with carrot and baby spinach, red and green capsicums. You can leave out wine use vegetable stock, and or seafood stock. Air fryer cooking time might vary depending the size of your prawns and the amounts.
