
Meal for one
Well, I got leftovers corned beef and cos lettuce. What to go with it? This is meal for one: simple quick creative and fun lunch that does not require a lot of utensils. You can cook this during weekends or when you are in a hurry. Even make this as breakfast with your young children. Teaching them to turn leftovers into a new creation meal and not wasting food.

My lunch is two different flavoured eggs, has green and meat on toast. At least I can finish off the leftovers and it’s not wasted. I am glad to have a great lunch that is colourful, satisfying and delicious. Let’s cook!!!
Ingredients
2 buttered toast
2 eggs
4 cos lettuce
leftover cooked corned beef with eggs
nutmeg powder
chili flakes
Italian seasoning
salt
pepper
butter
Method
Put 1 tablespoon butter in saucepan, on medium heat. Once butter melted, crack one egg straight into the pan, Season it with salt, pepper, sprinkles nutmeg powder (Opps I had sprinkled a bit too much) and chili flakes over it. Let it cook till egg white looks white. Spoon the butter over the yolk to cook it. When yolk nearly set, flip over just for 5 seconds. Then removed it to a plate.
Put another 1-2 tablespoons butter into pan. Once melted, crack the second egg straight into pan, season with salt, pepper, sprinkles Italian seasoning and chili flakes. Let it cook till egg white looks white. Spoon the butter over the yolk to cook it. Now put two slices bread into toasted and toast it. Then spread some butter over it. Transfer to plate and place the cook eggs on each bread. Warmed up leftover corned beef, place cos lettuce on one side of the plate. When corned beef is warmed up spoon it over to the other side of the plate. Enjoy lunch with a big mug of coffee.
