
Today, the weather is so cold, and the Govt is increasing the gas bill. Needed hot bowl of soup and don’t want to use my gas stove, and heater to warm up; using microwave instead. I am using my leftover Hairy gourd chicken soup to go with my dad bought this new brand of packet thin koay teow for my quick and easy lunch. I have attached the Hairy gourd chicken soup recipe at the bottom.

The soup is dark brown colour as I use chicken cubes that my sister had left in my pantry and it’s expired. I don’t like wasting food, as long as it didn’t kill me, I will use it. Add bean shoots as vegetables. The taste is herbal flavour, the thin koay teow is silky smooth, and delicious. Let’s make koay teow in brown soup!!!

1 packet of thin koay teow soup
leftover Hairy gourd chicken soup
bean shoots
Method
Open the triple zip locks bags, place in a deep microwave bowl to thawed the hairy gourd chicken soup first, on the bench top for about 40 minutes. Once the soup had thawed, place it in the microwave, heat it until really hot: microwave for 15 -20 minutes. See if it’s hot enough, stir it, spoon the chicken pieces up to check it’s hot. If not hot, microwave a further 5 minutes. Once, soup is hot, bring out to bench top.
Then open the packet of thin koay teow and it’s condiments, place them inside the soup, pushing koay teow inside soaking. Then return to microwave, and microwave further the soup to also cook the koay teow about 6-8 minutes until koay teow is softened and cooked. Now add in bean shoots, toss to mixed well. Enjoy the hot bowl of hairy gourd chicken bean shoots thin koay teow soup with a cup of hot green tea.
Note: You can cook the bean shoots for 1 minutes if you want to. Microwave watts vary. Check your soup is really hot before adding the thin koay teow. You can eat your soup with a bowl of rice and side vegetables. Do not use the expired chicken cubes, use fresh batch.
