
Felt like having pizza today. Bought pizza base, kale, packet of sage, bacon, and I jump for joy finally I managed to get cannellini beans on sale. Most of the time, it’s hard to get them in my supermarket. Mostly they sell in canned. I didn’t make pizza base as I don’t have the strength to knead nor the time to wait for the dough to double.
It’s a cheat quick and easy made when I have all the ingredients ready. Trying out my new pizza tray. The sauce that I spread is cannellini puree. I got Parmigiano Reggiano cheese rind with some cheese still attached from my friend. Par cook kale until slightly tender. Got to soak cannellini in hot water to rush it as I didn’t soak overnight.
I had put in too long: should have taken it out a few minutes earlier. Luckily, it’s not burn. It looks not presentable though but its edible. My pizza is simple quick, charred, yummy and comforting to eat. Let’s assemble the ingredients and bake it!!!
Ingredients
1 bought pizza base
300 g cannellini beans
250 g sliced mushrooms
1 small packet of sage about 15 g
4-6 whole garlic pieces
1 Parmigiano Reggiano cheese rind with some cheese still attached
250 g diced bacon
1 small onion, thinly sliced, divide
8-10 kale leaves, tear up to bite size
Parmesan
Pecorino
Mozzarella
chili flakes (OPT)
salt
black pepper
oil
water, for puree
Method
Soak cannellini beans in hot boiling water in a metal bowl for 4 hours. Drain the beans then refill in the pot with cold water covering the beans. Next add in sage, garlic and the small rind in. Bring the beans to a boil, then cover and reduce to a low simmer. Times vary and the amount you use; if you’re looking for a creamy soft inside with a slight bite on the outside. (mine took almost 2-4 hours and didn’t soak overnight, so keep checking).
When beans are done, remove hob, place the pot in a basin with cold water and keep the liquid. Now it had cool down, spoon some of the cannellini bean with the liquid, sage, garlic and rind into Nutri bullet. Season with salt and pepper. Blitz them in batches, if too thick add a bit water. Pour out into the metal bowl and set aside.
Preheat oven 230 degrees C. Place the pizza tray in the oven for about 20 minutes. Meantime in a pot of hot water blanch kale with salt, pepper and oil for about 6-8 minutes until slightly tender. Drain and set aside.
Open the pizza base plastic, lay pizza base on a clean benchtop. Spread cannellini puree over it. Next place kale, some onion, followed by mushrooms, bacon, and the remaining onion. Top with chili flakes, Parmesan, Pecorino, Mozzarella. Drizzle some oil, salt and pepper.
Remove the hot pizza tray, be careful it’s very hot, I put in on another tray, then lifted the pizza base with ingredients onto the hot pizza tray. Place pizza in the middle rack. Bake for 15-20 minutes or until the pizza is golden brown. Remove from oven and use the pizza cutter cut to bite size and eat it with a cool beer. Enjoy!!!
Note: You can put any ingredients of your choices. You can use peperoni, salami or diced ham. The vegetables can be carrot, or spinach. You can add fish or minced beef. You can add pineapple too.
