
Got some eggs, onion and peas leftover. Decided to combined them together for a healthy simple meal after I had heavy meal outside with friends.

My meal looks bland and in yellow and green colour but it’s a healthy, and delicious meal to go with rice alone. Let’s cook!!!
Ingredients
3-4 eggs
100 g green peas
1/4 onion, chopped
4 Tbs milk (OPT)
oil
salt
pepper
Method
Heat a saucepan on medium heat. Beat the egg and milk together in a bowl. Season with salt and pepper. Add oil, once saucepan is hot. Toss in onion and cook until onion is softened about 1-2 minutes. Add the eggs and allow to cook for 30 seconds stirring a little. Next scatter the pea over the eggs.
When the egg is mostly set but not quite fully cooked through, gently fold one half of the egg over the peas. Continue to cook on that side for about 1 minutes then turn over and cook on the other side for a further 1 minute.
Transfer to a bowl. Serve with rice. Enjoy!!!
