Poached egg tomatoes chives on buttered toast with cherries and blueberries served with plum berries fizzy drink

Today, mostly bits and pieces of ingredients combined to make a complete meal that is colourful to brighten the dull cold freezing day. With one egg, bread that will be expired in three days’ time, leftovers cherries tomatoes, chives, cherries, blueberries and plums.

I am glad to make fizzy drink again. It tastes better though the colour doesn’t look great. Don’t judge the drink by its colour. Be courageous to try. My lunch is creative, healthy and delicious. Let’s get creative lunch and drink!!!

Ingredients

Drink

4 Angelina plums, cut into half and remove seeds
80 g blueberries

80 g blackberries
65 g raspberries
water, divided
raspberry fizzy drink

Lunch

1 egg
1 toast bread
2 cherries tomatoes, halved
blueberries
cherries
chives
butter/margarine
water
salt

Method

Prepare drink

Place blueberries, blackberries, and raspberries along with plums and enough water into Nutri Bullet. Blitz until puree, then put the whole Nutri Bullet jug into the fridge. Before serving, stir it first then pour 3/4 c of puree into the glass then add some raspberry fizzy drink. Enjoy!!!!

Prepare lunch

In a wide pan, filled with half fill boiling salted water, and bring it to a light simmer over a medium heat. Crack egg into a cup and gently pour it into the water in one go movement. It will begin to cook immediately – don’t worry if the edges look a little scruffy. Depending on the pan, a really soft poached egg should take around 2 minutes and a soft to firm one will need about 4 minutes (it depends on the size of the egg and whether you’re using them straight from the fridge).

Put a slice of bread into the toaster and toast, butter the toast and plate up onto plate then put 4 halved cherries tomatoes on top of buttered bread 4 corners. Next place some cherries and blueberries along the side of the bread.

To check whether egg done, remove it carefully from the pan with a slotted spoon and give it a gentle push with a teaspoon. If it feels too soft, put it back and give the egg a minute or two more in the water to firm up. When ready, remove it to a paper towel to dry off. Then gently place in the middle of buttered bread, scatter some chives and sprinkle some chili flakes. Enjoy!!!

Before serving, bring out the puree, stir and pour 3/4 c into glass then add the raspberry fizzy drink. Serve the poached egg tomatoes chives on buttered toast with cherries and blueberries and the drink.!!!
