A friend gave me some leftovers blue pea flowers and the cake recipe. I searched the recipes for blue pea flowers; there are a handful on desserts: Asian desserts with glutinous rice and drinks. I changed the ingredients to call my own. I baked this cake for another friend’s birthday; we celebrated early at a Malaysian restaurant. Another friend brought plastic plates and spoons, as nowadays restaurants surcharge for extra plates and spoons.
Google: ” Dried blue pea flowers, or Butterfly Pea flowers, come from the Clitoria ternatea plant. These vibrant blue flowers are popular in Asia for cooking and medicine. They change colour when mixed with acidic ingredients like lemon juice, turning from blue to purple or pink. The flowers have a light, floral, and slightly sweet flavour, similar to green tea. They are brittle and used as a natural dye for rice, desserts, and drinks. Blue tea, made from these flowers, can be enjoyed hot or cold, often with lemon or honey. I tried the blue pea flowers it didn’t turned out blue colour as I wanted and had seen on others recipes. I am Thankful to God for His Gracious help to bake this blue pea flower cake for my friend. Everyone enjoyed it and took home a piece for their family to try. Let’s bake without quitting and Trusting God!!!

Ingredients
200 g plain flour
200 g granulated sugar
200 g butter, melted
2 large eggs
125 ml thickened cream
60 ml orange juice, bought
1 1/2 Tsp baking powder
1 Tbs dried blue pea flower
1 Tbs hot boiling water
2 Tsp vanilla essence
salt
rose petals
spray oil
Method
Preheat oven 175 degrees C. Grease and line a 21cm round spring form pan.
In a small bowl, steep blue pea flowersin 1 Tbs hot boiling water for 5 minutes. Strain and discard blue pea flowers. Then set aside to cool.
In a deep plate, mix mix well flour, baking powder and salt. In a mixing bowl, beat butter until creamy. Add sugar, beating until light and fluffy. Beat in egg one at a time. Next vanilla essence, until combined.
Now add in the dry ingredients; alternate with thickened cream and mixing until just combined.
Spoon half the batter into another metal bowl. Using a fine strainer, strain the blue pea flowers into the metal bowl with batter, stir well to get blue colour. Mine were not bluey but light green perhaps blue pea flowers are old.
Spoon alternating layer of plain and blue pea flowers into prepared pan. Then use one of the beaters to swirl make marble effect. Smooth the top and give a couple of gentle knocks on the bench top. Scatter some rose petal and lightly spray with oil spray over the top of rose petal.
Bake for 50 minutes or until skewer out clean. Switched off oven, leaving cake in oven for 35 minutes withdoor closed.
Once time up, removed from oven onto wire rack to cool further 20 minutes. Then flip the cake out of pan onto a plate mat and flip back onto the cake plate mat. Transfer to container when it has cool completely. Enjoy with tea, coffee or dessert wine!!!


Note: Do use new batch of dried blue pea flowers for blue colour. I read in one of the recipes can add a few drops of blue food colouring. Perhaps next time I will add the blue colouring.
You can use cocoa for some lining instead of marble effects. You can make it in a loaf pan. Also garnish with fruits or cream or any decoration you wanted.
