My friend gave me a bagful of her home grown oranges. She told me that the oranges are sour. I had to add lots of sugar to sweetened it. I tried using one orange to make juice and added 3 Tsp sugar it’s not too sour but not very sweet. I thought of making panna cotta with it.
Google: “Panna cotta is an Italian dessert of sweetened cream thickened with gelatin and moulded. The cream may be aromatized with coffee, vanilla, or other flavourings. Classic panna cotta has a silky, creamy texture and a milky, sweet taste.”
Google: “An orange is a fruit of various citrus species in the family Rutaceae; it primarily refers to Citrus × sinensis, which is also called sweet orange, to distinguish it from the related Citrus × aurantium, referred to as bitter orange. As an excellent source of the antioxidant vitamin C, oranges may help combat the formation of free radicals that cause cancer. Oranges contain no sodium, which helps keep a person below their daily limit. On the other hand, a cup of orange juice can boost daily potassium intake by 14%.”
“Maintaining a low sodium intake is essential to lowering blood pressure. However, increasing potassium intake may be just as important for reducing a person’s risk of high blood pressure, as it can help support the relaxation and opening of blood vessels.”
Since my last few panna using fruits and vegetables were good and successfully executed, today I am trying using orange juice without cream. I am glad to try my hands at making orange raspberry panna cotta. This is trial and error experiment. It’s beautiful, and not too sour as I had added more sugar. Let’s cook!!!
Ingredients
500 ml orange juice
100-120 g castor sugar
2 sheets gelatine
2-4 Tsp gelatine powder
80 g raspberries
water
Method
Soak gelatine sheets in a bowl of cold water. Heat orange juice and sugar in a pot. Adjust sugar especially orange is sour. Bring to a simmer about 5 minutes. Remove from hob once sugar has dissolved.
Squeezed excess water from gelatine and stir in. Let it cool to room temperature or put pot in a bucket of water. By this time check the juice to see if it had thickened a bit. If not, in a glass with warm water add 1 Tbs of water and add 2 Tsp gelatine powder stir to mix well and pour into orange juice mixture.
Gives a couple of stirs and pour into a glass bowl. Wait for about 1 minutes before dropping raspberries into orange mixture. Chill in fridge for 4-6 hours or overnight or until firm wobbly. Then sprinkles chocolate sprinkles over it just before serving. Enjoy!!!!
