
I thought I had posted this but it’s not. Well, I used my leftovers cake, blue shredded coconut, and custard vanilla to make myself a dessert. I love to be creative and this eye balls decoration seems to caught my eyes so I bought it last year. Best use it as I don’t like to waste food. I got the ice cream from my mom.

I am glad to have dessert that are creative. Don’t throw away your leftover cake, keep it in freezer for about 10 days, well I use it within 4 days. Transform it into a new dessert with additional ingredients. My dessert is yummy, fun and creative. Let’s be creative in making dessert!!!!
Ingredients
10 pieces leftovers cake
100 ml vanilla custard
2 scoops of ice cream
2 eyes balls decoration
chocolate sprinkles
blue shredded coconut
Method
To make blue shredded coconut: spoon 1-2 Tbs finely shredded coconut into a bowl and add 1 tiny drop of blue colouring, mix well and set aside in fridge. You can make more and in advance and keep in an airtight container in fridge and use them when you needed.
In a bowl and the cake pieces, pour the vanilla custard over it let it seep for about 5-10 minutes. Next scoop 2 scoops of ice cream, and place each eye ball on top of ice cream. Then sprinkles blue shredded coconut around the eye’s balls and next sprinkles chocolate sprinkles all over. Enjoy with coffee or tea.
Note: You can use ready bought sponge cake or any cake that you bake. You don’t have to use 100 ml vanilla custard You can use less. You can use thickened cream instead of vanilla custard.
