Air fryer rump steak coleslaw with celeriac sauce

My sister friend gave her some celeriac; she doesn’t like it and gave it to me. I searched for recipes how to cook it and what can it be added to. I bought rump and coleslaw on sale. Today, I am using air fryer to roast rump steak.

Google: “Celeriac is a nutritious vegetable with many uses and health benefits, including improving bone and heart health. It has green leaves and rough, brown roots. It may reduce diabetes risk and is a good source of vitamin K. Eating vitamin C-rich foods like celeriac might lower high blood pressure, a risk factor for stroke and heart disease. Celeriac can be eaten raw or cooked. Raw, it tastes crunchy like celery and is often added to salads. Cooked, it can be boiled, roasted, or pan-fried, providing different textures and flavours.”

“Rump steak is a lean and flavourful cut from the back of a cow. It has a strong beefy flavour and a firmer texture than tender cuts like fillet or ribeye, making it suitable for various cooking methods. Because it is lean, rump steak is a healthier option compared to other steak cuts.”

Glad to try making celeriac as sauce. My meal is black, white, with some colour, and delicious. Let’s get air fryer out and roast!!!

Ingredients

Rump steak and coleslaw

2 rump steaks
1/8 c oil
1/8 c balsamic vinegar
1/8 c Worcestershire sauce
1 Tbs minced garlic
salt
black peppercorns, crushed
1 packet coleslaw, bought

Celeriac sauce

300g celeriac
400-500 ml milk
2 garlic cloves, peeled
thyme leaves only, about 10
1 Tbs minced garlic
6 Tbs oil
salt
pepper

Method

Marinade rump overnight

Place steaks in a deep metal plate or large Ziploc bag.  In a bowl, whisk together oil, balsamic vinegar, Worcestershire sauce, garlic, salt and pepper.  Pour marinade over steak; if using plate cover with cling wrap. Let sit in the fridge for overnight. If not enough time for at least 4 hours.

The next day

Thawed rump steaks

Bring out rump from fridge to thawed to room temperature about 45 minutes to 1 hour.

Celeriac sauce

Peel the celeriac, wash and pat dry. Then slice about 1cm off the bottom of it and roll it on to that flat edge, so it’s nice and safe to slice. Slice and dice it all up into about 2cm cubes. Put a pot on a high heat, add oil, then add celeriac cubes, thyme leaves, minced garlic, salt and pepper. Stir around to coat and fry quite fast, giving a little colour, for 5 minutes.

Turn the heat down to a simmer, add garlic cloves and the milk. Make sure the milk is completely covered – add more if needed; cook for about 25 minutes, until tender. Season well to taste. Drain, reserving the milk. Let the celeriac cool completely about 5-10 minutes. Do in batches; put celeriac cubes and milk into Nutri Bullet. Blitz until silky like pouring cream. Set aside.

Air fryer rump steaks

Heat air fryer for 3-5 minutes at 200 degrees C. After 5 minutes, bring out the basket, lined it with air fryer baking tray. Remove rump steaks from deep metal plate. Place rump steaks into the baking tray, and put back the basket into the machine.

Cook rump steaks for 6 minutes. Turn rump steaks and cook for a further 2 minutes. At this point, rump steaks should be rare to medium rare. Cook for a further 2 minutes for medium rump steaks, plus 2 minutes more if you prefer them well-done. Remove rump steaks and put on a plate to rest for 3-5 minutes; cover with tented foil.

Coleslaw salad

Wash and spin dry using salad spinner if you have one or pat dry with paper towel. Then put into salad bowl. Season with salt and pepper. Spoon some celeriac sauce over the salad and toss to mixed well. Set aside.

Assemble on the long square plate

Using a big ladle, ladle the salad onto left corner of plate. Then place steak at the bottom next to salad. Brush with the marinade (OPT). Spoon some celeriac sauce onto rump from near to you upward in a strip or any how you like the sauce to be. Enjoy with a glass of red wine!!!

Note: It’s still a good idea to rest your steak for a few minutes after cooking in your air fryer because it allows the juices time to redistribute and the muscle fibres to relax. This will mean your steak is consistently moist and more flavoursome throughout.
