
Today it’s so cold with rain on and off. Even though I already had my lunch. I felt like having something hot to keep myself warm. With the fireplace on, I just could not seem to feel warm, thought of having a cup of coffee. But my coffee also finished have to wait till tomorrow when it’s not pouring heavy with hailstones.
I rummage my fridge and I found I have 3 more huge tomatoes from my sister and leftover medley tomatoes. Then in my pantry I have a box of vegetables stock. In my fridge there is about 100 g pepperoni. Now I can make soup that will keep me warm eating it by the fireplace.
This is a quick and simple soup with what I have in my fridge and pantry. I am glad to have this soup. Be contented even if with a few ingredients it sure does keep me warm with lots of chili flakes. Let’s quickly cut up the huge tomatoes and thinly cut in strips the pepperoni. My big bowl of tomato pepperoni soup is satisfying, comforting and delicious. Let’s cook up soup to keep warm!!!
Ingredients
3 big tomatoes, cut into bite size
125 g medley tomatoes, cut into bite size
100 g pepperoni
1 Tbs garlic minced
1 1/2 c vegetables stock
1 1/2-3 Tbs chili sauce
1 Tsp tomato paste
1 Tsp Italian seasoning
1/8 c water
oil
chili flakes (OPT)
basil, garnish
salt
pepper
Method
Put big tomatoes and medley tomatoes into Nutri bullet with water, blitz still pureed. Then strain over into a bowl. Heat oil on medium high heat in a pot until hot, adds garlic and cooks for 30 seconds.
Next adds in pepperoni, cook until cooked slightly crispy. Empty the tomatoes from bowl into pot. Stir well with garlic and pepperoni. Next adds stock, bring it to simmer about 20-25 minutes; in between stir again. Now add in Italian seasoning, tomato paste and 1 1/2 Tbs chili sauce, stir and lower heat, cook further 5-10 minutes. Taste whether you need more spicy soup, then add more.
Season with salt and pepper, stir a couple of times. Switch off hob. Warm bowl in microwave for 2 minutes. Spoon the soup onto hot warm bowl and sprinkles chili flakes and garnish with basil. Enjoy it with toasted buttered pane di casa. Enjoy!!!!!
