Peking duck flavoured noodles with chicken black fungus and rocket leaves soup

Went to Aldi to get toothpaste, ended up getting this instant Peking duck flavoured noodles soup. Have not had Peking duck for ages so, bought 10 carton bowls. Decided to add cooked chicken pieces: recipe written below, rocket leaves, and black fungus; bought two days ago to my noodles soup.

Black fungus from commercial sources is not associated with significant side effects.

Ingredients

1 Peking duck flavoured noodles soup carton bowl
3-4 black fungus
rocket leaves
chicken breast pieces
hot boiling water
1 Tbs oil
1 Tsp sesame oil
1 Tsp light soy sauce

Method

Put kettle on. Once boiled pour into a bowl and add black fungus to soaked for 30 minutes. Meantime, season chicken breasts pieces with salt, pepper and 1 Tsp light soy sauce for 15 minutes. After soaking black fungus time up, rinse the black fungus well to remove any dirt or debris. Cut off any woody stems if necessary. Cut to bite size and set aside.

Heat a saucepan on medium heat. Add 1 Tbs oil and 1 Tsp sesame seed oil (OPT). Add the chicken breast pieces to the saucepan, making sure they are not overcrowded: if you buy more than 1 chicken breast fillet. Cook for 5-8 minutes, tossing around, depending on thickness, until the chicken is white in colour. I like to cook my chicken pieces for further 2 minutes. Remove to a plate.

Open the noodles carton bowl, empty the noodles and condiments into a bowl and place a plate at the bottom for easy to remove from microwave. Pour hot boiling water in. Add the cooked chicken breast pieces and black fungus.

Place into microwave, cook for 5-6 minutes. Halfway through, give a couple of stirs. Check that the black fungus and noodles have softened and cooked. Bring out carefully. Garnish with some rocket leaves in the center of the noodles. Enjoy with a cup of green tea or any tea: oolong, pu-erh, or English breakfast tea!!!
