
Got leftover previously bought garlic bread and egg. Having a simple brunch, as I just don’t feel well. Got to eat something. This is a quick and easy brunch. I am grateful to have ready bought bread and eggs as they are versatile to have for any time of the day.
Love having garlic bread for lunch mostly and they are cheap. The eggs are handy it can be cooked in so many ways. Today, I let my egg yolk scatter over the bread and for garnish add half a stalk home grown green shallot. Let’s cook and get back to bed.
Ingredients
1 sliced garlic bread, bought
1 egg
water
white vinegar
green shallot
Method
Preheat oven to 180 degrees C. Thawed garlic bread on baking tray. Cook for 5-7 minutes until crispy. Crack the egg into a cup. Bring a pot of hot water to roiling boil, then add in white vinegar. Sir the boiling water to make a whirlpool pour the egg in and cook till white is cooked and yolk is soft running. Gently remove the egg with a slotted spoon on to a paper towel. Cut the green shallot and set aside.
Once garlic bread is cooked. Place it in the middle of the plate. Top with egg, I crack the egg to let the yolk run over and gently spoon with tea spoon and scatter all over. Then sprinkles green shallot over the egg. Enjoy with a hot cuppa!!!
