
Bought pane di casa, spam meat and rocket leaves on sale. Had some leftovers of asparagus puree, best finished off. My simple lunch. By now you would know I love spam meat.

Ingredients
2 slices buttered pane di casa
2 sliced spam meat
rocket leaves
asparagus puree
tiny drop of oil
Method
Cut the end stems of 3 bunches of asparagus. Cut into bite size. Bring a big pot water with 1 Tsp of salt to boil. Meantime, wash and dry rocket leaves. Then toast the pane di casa. Once bubbles are around the edges of the pot, put in cut up asparagus, cook for 6-7 minutes.
Use a knife or fork to check if the asparagus is tender. It should be easily pierced but still have some crispness. Drain and reserve the water for puree. In the Nutri Bullet, add enough water to blitz asparagus. Do it in batches.
Blitz until pureed and transfer to sterilized air tight container. Repeat with the remaining asparagus until all done. When it had cool completely, cover with lid and place in fridge. Use a clean dry spoon to scoop the amount you want to use each time. The rest cover with lid and back into fridge. Can last 2-4 weeks in fridge. Make sure no liquids drip inside it.
Open the spam canned, slice them to your choice of thickness. Heat a pan with a tiny drop of oil. Once oil is hot, add spam meat and reheating for 5-8 minutes, depending on how browning the spam meat you want. You can microwave it for 30second increments until hot, and Google: “baking the whole can takes about 20 minutes at 190°C. “
Butter the pane di casa and set it on a plate. When the spam is done reheating/cooking, place it on top of the pane di casa, followed by rocket leaves, and spoon 3 dollops each on top of the rocket leaves. Enjoy with a glass of tea, coffee, or asparagus juice if you have more asparagus to make juice.
