Koay teow curry soup fried tofu with vegetables

I found koay teow instant noodles just when I didn’t intend to get. Out of curiosity to see and taste if it’s spicy curry. I bought a packet to try and a packet fried tofu. I have some leftovers choy sum and fried shallots. So, I added into my koay teow curry soup. It’s not spicy, I have added one tablespoon garlic onion chili paste in. Now it’s spicy curry. Normally, curry noodles include fried tofu, tofu pok, fish cakes, chicken, and vegetables. I used fried tofu pok, and choy sum.

Knowing me, I am a chili lover, so, I got to have spicy taste to my taste bud. My koay teow is spicy, colourful, comforting, healthy and delicious. Let’s cook!!!

Ingredients

1 koay teow instant noodles packet
5 fried tofu, cut into half
1 Tbs garlic onion chili paste
leftovers choy sum
dried shallots
enough water

Method

Put kettle on. Open the koay teow packet, and the curry paste, and condiments. Empty them into a bowl. Place the bowl on top of a plate for easy to carry out later as it will be hot. Cut the fried tofu and place into the instant koay teow, curry paste, and condiments.

Now add hot boiling water into the prepared bowl. Microwave for 6 minutes until koay teow softens and dried tofu puffs up. Stir a couple of stirs. Then add in choy sum to the bowl, and microwave a further 1-2 minutes. Bring out from microwave and scatter some dried shallots. Serve with a glass of white wine. Enjoy!!!
