
Today, my grandnephew got baptized. My niece had asked me to bake a cake for his baptism celebration. Since Easter is coming up, I decided to make Easter bunnies and eggs in baskets. In addition, I made white chocolate bites and added the leftover raspberry bites for some red color on the cake. For the glaze, I added orange to the butter glaze for extra flavour.

God, bless my grandnephew, keep him safe and may you shine upon him and be gracious to him as he walks along his life path holding your hand. Thank you, God, for your help to bake this cake with your love and my love poured into it. Thank you, God, I am glad to be able to share your Glory gift with families and friends celebrating the Baptism ceremony and with everyone in the world. The cake is moist, buttery, flavourful, and everyone had a second piece. Let’s bake a Baptism and Easter cake!!!

Ingredients
375 g butter, melted
6 large eggs
4 c self raising flour
3 Tsp vanilla extract
1 1 /2 Tsp baking powder
1 Tsp bicarb soda
1 1/2 c castor sugar
1 Tsp salt
210 ml skim milk
210 ml orange juice, bought
150 g double cream
Decorations and glaze
280 g white melting chocolate chips
5 Tbs milk
raspberries bite
250 g butter melted
25 ml orange juice, bought


Method
Do the chocolate one day in advance
Double boiler method: a pot with enough water, make sure not touching metal bowl, add white chocolate into metal bowl on medium heat. Stir from the centre out until completely melted. White chocolate can harden quickly, so reheat again if it does. Remove from the pot and add in milk, stir to mixed well. Cool slightly before spooning the chocolate onto Easter bunnies and a eggs baskets moulds. Place them in the freezer for about 4-6 hours or overnight. The remaining white chocolate pour into a cocktail glass or wide glass, let it set in fridge for 2-4 hours. Bring out using a fork, scrape the harden chocolate to make tiny bites. Place on to plate and cling wrap until needed.
The next day bake the cake
Preheat oven 160 degrees. Grease and line a 10 inches square springform cake. Mix flour, baking powder, bicarb soda, and salt well, then sift them twice. Beat butter, castor sugar and vanilla in the mixing bowl on medium high speed for about 5-7 minutes until light and fluffy. Add egg one at a time, beating well with each addition until combined. Do not over beat.
Now add in half the flour mixture, stir to combined in direction from North to South; East to West. Next add milk, do the same method North to South; East to West until combined. Repeat with the remaining flour mixture and this time orange juice and double cream. Make sure well combined. The consistency is batter flopping down not too runny nor too dry.
Spoon the batter into prepared pan. Smooth the top, gives a couple of gentle knocks on the bench top. To release air bubbles. Bake for 1 hour or until skewer out comes out clean. Switch off oven, leave the cake in for 1 hour. Then removed from oven to rack for about 20-30 minutes to cool further. Now flip cake onto a foiled plate mat to cool completely. Meantime melts 125 ml butter first in microwave, let it cool slight.
Once the cake is cool completely, brush the melted butter on top of the cake. Let it sit for 45 minutes. Microwave the butter to melts it again, let it cool slightly then brush again another coat. Leave to cool and slightly harden the butter glaze. If not enough butter, add another 125 g and repeat the method for glazed. Before serving and cutting garnish the cake with 2 bunnies with ears close together, opposite side left corner, 2 whole tiny bunnies opposite on top centre. Followed by Easter eggs basket on top right corner, in the center and opposite side bottom left corner. In the center, 2 bunnies ears open opposite side too. Scatter some white chocolate bites all over the top of the cake and do the same with raspberry bites. Serve with coffee, tea or dessert wine and the remaining chocolate. Enjoy the Baptism ceremony or Easter ceremony cake!!!
