My sister gave me a loaf of pane di casa. I bought a packet of thinly sliced salmon, rocket salads, and a box of marinated red capsicum in oil. My mom gave me a jar of strawberry jam. Found that I have leftover blueberries. Decided to add in to make my plate colourful. This my creative fun meal.
“Pane di casa is a traditional Italian bread, meaning “bread of the house.” This rustic loaf features a crunchy crust and a soft, chewy interior, often baked as a Vienna-style or round loaf. Its neutral, slightly nutty flavour makes it comforting and versatile, perfect for pairing with soups, salads, or sweet and savory toppings.”
“Rocket, also known as arugula, is a nutrient-dense leafy green that is high in vitamins K, A, and C, promoting bone health, immunity, and heart health. It has low calories and high fiber, making it beneficial for weight management, and is often consumed raw for its spicy flavour. It contains nitrates that may lower blood pressure and enhance exercise performance, along with compounds that reduce inflammation and may help prevent cancer. With about 25 calories per 100g, it is hydrating and satiating, and its low oxalate content enhances mineral absorption. Rocket is popular in salads, on pizzas, in pasta, and in sandwiches.”
“Thinly sliced salmon is often served raw, cured, or smoked, providing a delicate texture and rich in omega-3 fatty acids, protein, and essential nutrients like Vitamin B12 and Selenium. It promotes heart health, reduces inflammation, and supports brain function while aiding muscle maintenance. Omega-3s help lower triglycerides, reduce blood pressure, and fight chronic inflammation linked to diseases like diabetes and cancer, benefiting cognitive function and eye health with low calories.”
Glad I can use the jam my mom gave me in a jar of strawberry. My creative fun meal is colourful, healthy, and delicious. Let’s be creative with food!!!
Ingredients
4 slices of pane di casa
80 g sliced salmon packet
some rocket salads
some marinated red capsicum with oil
leftover blueberry
butter
strawberry jam
salt
black pepper
Method
Spread 2 pane di casa with butter and the other 2 with strawberry jam. Set aside on a plate. Open the packet of thinly sliced salmon, take some and place them on each of the pane di casa. Next, wash and dry the rocket salads and place some on top of each pane di casa.
Followed by some marinated red capsicum with a bit of oil, drizzle onto the rocket salads. Then season with salt and black pepper. In the centre for colour on the meal put some blueberries in. Serve with a cup of brewed coffee. Enjoy!!!
