
Abundant figs in my backyard, the birds have had their share. Now it’s mine, not giving to the birds anymore. I have to shoo the birds away with old CDs and bells tied to the branches near the figs. Also, I had my sister’s dog with me as animals are not allowed in hotels. Her dog chases after them and barks to shoo them off.
I collected 3 baskets full, not eaten, and gave some to my neighbor who mowed my lawn for me, to friends, to my sisters, and myself; I have 15 whole plum figs. My dad gave me some bananas. I decided to use 4 figs and 1 banana. Then I remembered my friend gave me some palm sugar; I melted half of the disk-sized palm sugar with the intention to drizzle it on my ice cream. Why not drizzle some into the figs and banana smoothie?
“Palm sugar is a natural, unrefined sweetener from palm tree sap, known for its caramel-like flavour and lower glycemic index (35–40) compared to white sugar (65–70). It offers a steady energy release and contains vitamins, minerals, and inulin, promoting gut health. With less sucrose than cane sugar, it is a healthier alternative but should still be consumed cautiously by diabetics due to its impact on blood sugar levels.”
I am glad to add in palm sugar. The taste of my smoothie has a mix of caramel, butterscotch, and toffee, with subtle smoky or earthy undertones combine with fig and banana make it healthy and delicious. Let’s bring out Nutri Bullet!!!
Ingredients
4 plum figs, cut into bite size
3 ice cubes (OPT)
1 banana, cut into slices
1/4 c water
4 Tbs skim milk
palm sugar, drizzle
Method
In Nutri Bullet cup, add ice cubes, figs, banana, water, and milk. Blitz until pureed, then drizzle some palm sugar and stir a couple of stirs to mixed well. I blitz it for 30 seconds.
Pour into glass. Place in fridge to chill for 1 hour. You don’t have too chill. Enjoy it watching Ben Hur.
