
Bought spinach, minced pork, frozen vegetables and eggs on sale. Decided to make spinach egg soup and stir fry minced pork with frozen vegetables to go with rice.

Ingredients
Spinach egg soup
4 bunches spinach, stems removed, washed and drained
3 large eggs
1 Tbs dried anchovies
2 Tsp minced garlic
1 L water
salt
pepper
oil
Minced pork and frozen vegetables
200 g frozen mixed vegetables
200 g minced pork
1 Tbs minced garlic
1 Tbs teriyaki sauce
2 Tbs shao xing wine
salt
pepper
oil
Method
In a pot heat 1 Tbs oil on medium heat. Add garlic stir until lightly brown. Add anchovies stir for about 1 minutes. Lower heat, add water bring to boil. Next add spinach, mix around to cook it about 7 minutes until wiltered.
Beat the eggs lightly and pour in to soup. Stir constantly to get the egg looks like scramble but in small curl pieces. Add seasoning. Once eggs done. Turn off heat.
Minced pork and frozen vegetables
Heat a saucepan with 2 Tbs oil on medium heat. Once it’s hot add minced garlic, cook for about 1 minute. Now add in minced pork, cook stirring for about 4-5 minutes until brown. Next pour in shao xing wine, and teriyaki sauce, stir to coat the minced pork. Season with salt and pepper. Continue cooking till minced pork are cooked. Now add in mixed vegetables, toss around for 2-4 minutes. Spoon onto a serving plate.
Assemble bowl
Spoon enough rice onto bowl, followed by 2 ladle of spinach egg soup; place spinach egg on top of the edge of the bowl. Now spoon enough minced pork and frozen vegetables onto the bottom of the edge of bowl. Then add one more ladle just the soup. Enjoy with a glass of white wine.
