Beef burger vegetables penne

Got leftovers beef burgers but no more bread and have peas and onion. Decided to cook them to go with penne pasta. This another creative way to use burger if you don’t have any more bread or buns to go with.

We have got to eat something. This is a simple meal with meat and vegetable that can be versatile with rice or pasta or wrap. Most house would have onion and garlic or even have herbs or home plant vegetables and fruits. Head up Easter Day is coming soon. This could be a perfect family celebrating Easter’s Day or celebrating Easter alone meal.

Ingredients

250 g penne pasta
5 beef burgers meat
200 g peas
1 onion, sliced
1 Tbs garlic minced
1/2 c vegetables stock
2-4 Tbs tomato paste
1 medium carrot, cut to bite size
1 zucchini, cut to bite size
1 red capsicum, deseeded, cut to bite size
1 Tbs minced garlic
Italian Seasoning
Dashes of balsamic (OPT)
salt
pepper
oil

Method

Thawed beef burger meat and peas on benchtop for 20 minutes from freezer. Once thawed, slice onion and cut beef burger to bite size. Then heat a saucepan on medium high heat, add oil. Cook garlic and onion for 1-2 minutes until fragrant. Add beef burger pieces cook until all brown over and cooked. Put the kettle on.

Next add carrots, zucchini, stock, tomato paste and a few dashes of balsamic into the saucepan with beef burger. Bring to a boil and stock has reduced for about 10 minutes. Meantime, pour hot boiling water and add 1 Tbs of salt into a pot, put on the hob for 2 minutes. Now add the pasta and stir immediately to prevent sticking. Let penne cook for 10-12 minutes.

When the 10 minutes stock reduced up, add in peas, toss around to mix well for 1-2 minutes. Season with salt and pepper to taste. Remove a piece of pasta and bite into it. It should be firm to the bite, not mushy. Once the pasta is cooked to your liking, drain it immediately and serve with the cooked beef burger and vegetables; now add the capsicums and toss around in penne, beef burger and vegetables. Serve with a glass of red wine. Enjoy!!!

Note: Check the package for the recommended cooking time, as it can vary slightly by brand. You can any flavoured canned tuna. You can add in the capsicum and cook it with the vegetables. I didn’t cook my capsicum. Also, you can use fresh or dried herbs of your choice. You can use fresh tuna if you want to or add meat or just vegetables alone. You can use any vegetables of your choice. Increase the amount of the ingredients if you are making for more people.
