Fig asparagus and lemongrass smoothie

Went to a friend home to celebrate St. Patrick Day. Having to wear green. It was fun, as she made her food with green ingredients and shamrock. After I got back I decided to make something with green ingredients.

“Saint Patrick’s Day, celebrated on March 17, honours Ireland’s patron saint and marks his death. Initially a Roman Catholic feast day, it has transformed into a secular celebration of Irish heritage, characterized by parades, dancing, special foods, and the tradition of wearing green, which symbolizes Irish nationalism.”

Yes, asparagus, fig, and lemongrass paste can be mixed together in a smoothie. While an unusual combination, it is possible to create a refreshing, healthy drink by balancing the earthy asparagus with the sweet figs and zesty lemongrass. Here’s my last-minute, quick green drink that is healthy and weird, though tastes yummylicious.

Ingredients

3 stalks asparagus, trimming the woody ends, cut to bite size
4 green figs, stems removed and cut to bite size
2 Tsp lemongrass paste
water
green food colouring
salt

Method

Bring a large pot of water to a boil, adding 1 Tbs of salt. Add the asparagus. Cook for 2–5 minutes until tender-crisp. Transfer to a bowl of ice water for 1 minute to lock in colour and stop cooking. Drain well and pat dry, then add into Nutri Bullet along with figs and lemongrass paste with 1/8 c water. Blitz until pureed. Switched off Nutri Bullet.

In a bowl, add 3 Tbs of water and use a toothpick dipped in green food colouring to stir a couple of times to mix well with the water. Now remove the cup and open the lid of the pureed asparagus, fig, and lemongrass. Pour the green water in and cover the lid back on. Put it back on the machine. Switch it on and blitz for 10 seconds.

Switch off Nutri Bullet, open the lid of the cup and pour into the glasses. Enjoy!!!!
