Here’s my leftover turkey meat that I had freeze since Xmas celebration. Do check for mold. I got some coleslaw. I am going to make a simple lunch to finished of my turkey meat, rainbow coleslaw and rice paper rolls. Addition to it I am also going to finished off the chili mayonnaise; my sister gave me some from her friend. My simple healthy leftovers lunch are delicious colourful. Let’s create a healthy and colourful meal!!!
Ingredients
4 rice paper roll sheets
leftovers turkey meat, shredded
leftovers rainbow coleslaw
chili mayonnaise
salt (OPT)
pepper (OPT)
Method
Wear gloves. Fill a big deep metal bowl wide enough for the round rice paper roll to be dunk/ submerge the whole rice paper into the warm water for about 2-3 seconds. Do one by one. Place one on a clean plate, squeeze some chili mayonnaise on the rice plate; close to you about 2 finger s from the edge of rice paper roll.
Next place some shredded turkey meat on top of chili mayonnaise. Next the rainbow coleslaw, season with salt and pepper if you are using. Now using both hands, lift the bottom edge close to you and flip over the turkey and coleslaw; gently press and down and push toward you.
Then flip both sides: right and left edges over the middle of the folded rice paper. Gently press to seal them close. Next roll them from close to you upward till the top edge. Transfer to a clean plate.
Repeat with the remaining 3 rice paper roll sheets. Try make them looks like a big log if you can. If you want them to looks equally same length and size. Remove the glovers and enjoy your turkey rice paper rolls with a glass of white wine or tea.
Note: You can stuff or fill with any vegetables, shredded pork, beef, eggs, mushrooms, or even cooked and thinly cut strips of tofu. You can even add fruits, and instead of mayonnaise, use mashed avocado. You can also add shredded roast duck and use hoisin sauce. If you want to add ragu meat, use two rice paper rolls to prevent it from breaking as it’s too wet and heavier.
