Rice pudding with roasted figs

As I was browsing for a recipe using arborio rice and thickened cream to finish off my leftovers, I saw a baked rice pudding using this arborio rice. I decided to try it. I am making a small bowl just in case it doesn’t turn out. You know me, I don’t like wasting food. I am using 3 figs. My first time baking rice pudding, it looks dry not creamy as I don’t have enough thickened cream. Next time will put more thickened cream. Well, it’s tasty and yummy.

Ingredients

1/8 c uncooked arborio rice
3 plum figs, stems removed and halved
240 ml milk
80 ml thickened cream
30 g castor sugar
1/2 Tsp vanilla essence
5 g butter to grease
a pinch of nutmeg
a pinch of salt (OPT)
rum
honey

Method

Preheat the oven to 140°C. Grease a baking dish with melted butter. Butter the inside edge (no need to do the bottom) of a baking dish. Place the rice in a sieve and wash well under cold running water. Drain.

Place the cream, milk, sugar and vanilla essence in a small pot over low heat. Stir until well combined and cook until hot. Scatter arborio rice over prepared baking dish. Pour in the hot cream mixture and stir to combine. Place dish on a baking tray and bake for 30 minutes.

After 30 minutes, take the dish out of the oven, stir well, and return it to the oven and scatter with nutmeg. Set the timer for another hour. Increase oven to 190°C, add in the figs; drizzle with rum and honey and return rice with figs to oven and bake, without stirring, for a further 15 minutes. Remove from oven and stand for 20 minutes. Enjoy!!!

Notes: Rice pudding is also delicious when served cold. You can add any fruits of your choices. Make sure you have enough thickened cream about 1/3 cups or 150 ml.
