
Saw on tik tok somewhere on how to make butterfly egg scrambled. I tried it and it looks beautiful. I am having it with bought a box of 10 rolls kin tok kin and bought buk choy on sale. Figs are abundant in my garden. Today, I have craving for figs. I am going to add it into my dinner. I am also craving for chili sauce.
What is kin tok kin? Kin tok kin is a dialect of Chinese mean bean curd rolls. Google: “Bean curd rolls are a dim sum dish made from bean curd skin wrapped around a savory filling. The rolls can be fried, steamed, or braised.” My parents love to eat this kin tok kin (bean curd rolls). I bought one for them and one for myself. It’s great as a meat dish and healthy to eat.
My rice is hidden by my creation butterfly scrambled egg. I know it’s strange to have figs with rice and vegetables. Well, my craving for it had me adding to my dinner. I am glad to explore and tryout making scrambled egg like a butterfly. Let’s Cook!!!
Ingredients
2 kin tok kin (beancurd rolls)
1 bunch buk choy, cut into bite size
1 Tbs minced garlic
1 Tbs mirin
2 Tsp soy sauce
4 figs, halved
1 egg
chili sauce
Italian Seasoning (OPT)
oil
salt
pepper
Method
Heat a saucepan with 1 Tbs oil on medium heat. Add garlic and cook for 25 seconds. Next add in the stems of buk choy cook for 2-3 minutes. Now add in the leaves, mirin and soy sauce; cook a further 3-5 minutes until cooked. Transfer to a plate.
Crack egg into a small bowl, lightly beat it with salt and pepper. Set aside. Using a small saucepan, heat 1 Tbs oil on low heat. When oil is hot, pour the egg into the saucepan, let the egg bubbles and sprinkles Italian Seasoning over the egg for 2-3 minutes. Let egg slightly cook around the edges. Using a pair of chopsticks, clipping/pushing the center of egg in to make it into butterfly. Let it cook further 1-2 minutes. Then removed to a plate.
Heat up the two kin tok kin in microwave for 1-2 minutes. While waiting, scoop some rice onto a deep plate. Place cut halved figs on the left side. Once warmed up, place one kin tok kin next to figs on top. Followed by some buk choy and next to it the second kin tok kin.
Add some more buk choy. Now place the butterfly egg on top of rice. Squirt 4 tiny drops of chili sauce on the 4 corners and a slight bigger drop of chili sauce in the center. Drizzle some over the kin tok kin. Enjoy with a glass of white wine!!!
