
I found a few packets of expired unflavoured gelatine in my pantry. Best use them than throwing out. I saw on Instagram somewhere and I can’t remember where. Anyway, the recipe uses goat milk. I don’t have goat milk. I use full cream milk and thickened cream. I also have some leftover cherry, strawberry, blueberry tomato, and orange juice puree and some blueberries. As you know me, I don’t like wasting food. I had added the leftover about 2 Tbs puree and blueberries to make this panna cotta that I can called my own.
From my memory and from my experimenting in making panna cotta. I am glad it turns out well. It set to the desired setting, it has a clear ring on top, could be the puree that I had added in as well as blueberries on the clear ring and inside the milk and thickened cream. The colour is off white pink, its looks beautiful and delicious. Let’s make it for Chinese New Year or Valentines Day!!!

Ingredients
300 ml thickened cream
1.25 L full cream milk
2 packets unflavoured gelatine (expired)
4 Tsp water
2 Tbs cherry, strawberry, blueberry tomato, and orange juice puree
1/3 c granulated sugar, about 65 g
1/4 Tsp salt
200 g blueberries
Garnish and serve
Blueberries, garnish
strawberries, serve


Method
Add 4 Tsp water to a bowl and sprinkles the 2 packets gelatine over it. Be care not to pour all at once into the water. If your unflavoured gelatine is not expired use 1 packet with 2 Tsp water. Stir in the water gently until combined. Let it sit at room temp for about 5 minutes.
In a big pot add milk, thickened cream sugar and salt. Cook on medium heat, beating until sugar has dissolved and the mixture is warm to touch about 5 minutes. Now add in the gelatine to the milk mixture and bring it to a simmer. Stirring until gelatine has dissolved about 2-3 minutes. Next add in the puree gives a couple of stirs.
Place the whole pot in a basin of water to cool it slightly. Meantime greased the jelly mould with oil all over. Not too much though. When the pot feel cold to touch, slowly pour the milk mixture into the jelly mould. Next scatter 200 of blueberries all over the milk mixture. Then cover with the jelly cover and place in fridge to set about 4-6 hours or overnight. Serve with blueberries and strawberries. Enjoy!!!!
Note: Remember If your unflavoured gelatine is not expired use 1 packet with 2 Tsp water. You can use goat milk instead of thickened cream and full cream milk. You have to make sure goat milk is 2 1/2 c. Instead of cherry, strawberry, blueberry tomato, and orange juice puree. You can use vanilla extract or essence or vanilla pod. You can use any fruits of your choice.
