
Colourful meal for one
I always love to eat Macca burger. I have been told they are often thought of as greasy, unhealthy fast food. Do eat it in moderation. I bought these beef burgers because they were on sale. My sister gave me some mayonnaise that she said she hardly uses. It’s been sitting in her fridge for a whole year. I am adding it to my egg bread, mixed salad, burger, and cherry tomatoes.

This is a multi- tasking cooking. I am not using burger bun. I have 2 eggs left; don’t like wasting food. So, I use it in my two slices of bread. At least I have healthy meal, comforting, colourful and delicious. Let’s cook!!!
Ingredients
1 bought burger
2 slices of bread
2 eggs
2-4 cherry tomatoes
5 Tbs milk
mixed salad
mayonnaise
chili sauce
butter
oil
salt
pepper
Method
In a wide, shallow bowl, beat the eggs with milk. Season with salt and pepper. Heat 1 Tbs of butter in a saucepan on medium heat. Meanwhile, soak each bread in the egg mixture. Pressing down the bread in the egg mixture for about 10 seconds, then flip over and pressing down. Make sure it is fully covered.
Cook for about 3 minutes, until the bottom is golden brown and crisp. Flip the bread over, adding more butter to saucepan as needed, and then cook for another 2 or 3 minutes, until the second side is golden brown and crisp.
While the egg bread is cooking for 3 minutes, heat non-stick saucepan with a little oil. Place the burger on the melted butter in saucepan. Burger should sizzle when it’s in the hot butter. Cook the burger for 3 to 4 minutes.
Watch the egg bread make sure it’s not burnt. Quickly slide a spatula under the burger and flip to the other side. You should see a dark brown sear on the underside. Cook for another 3 to 5 minutes to your preferred doneness. Switch off hob. Back to cooking the second egg bread, repeat the method above for egg bread.
To assembles: place the first cooked egg bread on a plate. Add mixed salad, season with salt and pepper. Then place hot cooked burger on top. Followed by cut into halved cherry tomatoes sit on top of burger. Squirt chili sauce and mayonnaise over the cherry tomatoes. Next place the second egg bread leaning on the first egg bread with salad, burger, tomatoes, chili sauce and mayonnaise. Take a pic and then place over the tomatoes. Enjoy with a cold beer!!!
