Ham egg and kim chi sandwiches

Bought a small bottle of spicy daikon kim chi, and egg. I have not had this combination before. Got leftover bread. This is simple lunch. You might say what kim chi with egg and buttered bread. Yes, I love kim chi and spicy food.

Google: “Daikon radish kimchi, also called Kkakdugi in Korean, is a mixture of Asian vegetables fermented in a slightly spicy and flavourful sauce. Do you know the different types of kimchi? In fact, there are over 180 varieties of kimchi! Although we are used to napa cabbage kimchi, kimchi can be made from many different vegetables.”

“Daikon radish, also known as Asian radish or daikon, is the star of this kimchi. It looks like a huge white carrot and has a milder taste than pink radishes. Moreover, during fermentation, daikon loses its spiciness, but not its crunchiness!”

Google: ‘Eggs are high in protein and contain beneficial nutrients, including choline and other vitamins. They also contain two antioxidants that support eye health. While eggs are high in cholesterol, research is mixed on whether dietary cholesterol increases blood cholesterol for everyone. For most people, eating eggs daily is likely safe and a beneficial source of protein and vitamins. However, people with high cholesterol levels may want to talk with a doctor before drastically increasing their egg consumption.”

Well, my simple spicy daikon egg sandwiches are comforting, spicy and delicious. Let’s cook egg and add daikon kim chi!!!

Ingredients

2 slices of bread
1 egg
1 slice of ham
daikon kim chi
butter

Method

Spread butter on the two slices of bread, then place a slice of ham on one slice of bread on plate. Set aside. Melt butter on pan over medium heat. Crack the egg directly into the hot melted butter. Cook until the white are set about 3 minutes. Fold into half, cook for 1 minute. Then flip over and cook for 2-3 minutes. Yolk is a bit hard.

Transfer egg to the slice of ham on buttered bread in the plate. Next spoon some daikon kim chi over the egg. Then cover with the second slice of bread. Enjoy with a cup of brewed coffee!!!

Note: If you want runny yolk, crack the egg into the pan, cover the pan, and wait 30 seconds to 1 minute. If it’s not hot enough, the yolk could start cooking before the white is set, and if it’s too hot the edges of the egg will start to brown.
