Air fryer corned beef pocket sandwich

My sister gave me a loaf of sourdough bread. My mom bought a canned corned beef and gave it to me. I decided to make a creative lunch using the bread and corned beef. Putting the air fryer to use today, in addition to finished off my leftovers arugula and spinach, and using bought kraft cheese slices and eggs two ways.

It takes an otherwise tough piece of meat, the beef brisket or beef round, immerses it in a brine filled with pink curing salt and other brining yummies and comes out the other side tender and spreadable with just a fork. Corned beef is basically salt-cured beef (with some pickling spices thrown into the mix). It is typically boiled after it’s cured, and often enjoyed with cooked cabbage. There’s also canned corn beef, or tinned corn beef. It’s basically corned beef in a can, like Spam. Canned corned beef is already cooked. It is safe to eat straight from the can. You’ll probably improve the texture by warming it up, and you’ll probably improve the flavour by browning it a bit in a hot skillet. But technically, you don’t NEED to do any of that. Contrary to common misconceptions, canned meats can retain a significant amount of their nutritional value. Thanks to modern canning techniques, essential nutrients such as protein, vitamins, and minerals are preserved during the canning process.”

Ingredients

6 eggs, divided
4 cherry tomatoes
2 cut thick slices sourdough
2 kraft slices cheeses, divided
1 canned corned beef
1 onion, sliced
1 red fresh chili, chopped
5 Tbs milk
1 Tbs minced garlic
1 Tbs oil
1 Tbs butter, melted
arugula
spinach
chili flakes
parsley



Method

Open the can, use a fork to push out corned beef from the can. Heat oil and butter in saucepan on medium heat until butter melted. Then add onion and garlic cook for about 1 minutes. Now add in corned beef, using spatula break it up. Toss around in oil mixture for about 2-3 minutes. Then crack 3 eggs into corned beef mixture, toss around to mix well for 5-8 minutes until eggs are cooked. Switch off hob and set aside.

Crack the remaining eggs onto a deep plate. Pour milk in and beat to mix well. Dip a slice of bread in and let it soak the egg mixture on both sides. Meantime, lined a square baking tray with double foil. Bring out the air fryer, remove the cup from the machine.

Once bread is soaked, transfer to the prepared baking tray, place a slice of cheese on top, place the tray into the cup and into the machine. Switch on the plug, set temperature to 180 degrees C, on baking mode, cooked for 5 minutes until bread it slightly toasted. Bring out the cup and removed the tray. Transfer the bread to a plate.

When the second bread is soaked, transfer to the prepared tray, using a spoon, make a slight indent in the centre. Filled with the cooked corned beef, arugula, spinach and a slice of cheese. Cook for 5 minutes. Bring out the cup, and place the slightly toasted bread on top of the second filled bread. Scatter some chili flakes. Put back into the machine, cook a further 2-3 minutes until cheese on top puff and browned.

Bring out the cup, removed the tray, transfer toasted bread to a plate. Garnish with parsley in the centre top of bread and cherry tomatoes at the four corners of the plate. Serve immediately with a cup of coffee. Enjoy!!!
