Stewed pork sliced and vegetables vermicelli noodles

Today I am not using udon or thin koay teow, which are used for soup, but vermicelli noodles. I intended to buy stewed luncheon meat canned and got sliced pork canned instead. To go with this sliced pork canned is my leftover cooked fried egg, which I have cut up into bite-sized pieces. In addition to them are leftover bits and pieces of stir-fried vegetables.

Do you know leftovers of food can be useful again? Don’t throw them away. Be creative; add the leftovers to rice or noodles and to any meat of your choice. Of course, if the food is not mouldy and is kept in the fridge or freezer. This is a quick and simple way to get a meal on the table. My cheat stewed pork gives extra flavour to vermicelli along with vegetables and chicken stock caramelised. Let’s get a creative new meal!!!

Ingredients

4 block vermicelli
1 Tbs soy sauce, marinate vermicelli
2 carrots, cut into bite size
8 green beans, cut into bite size
1 small cauliflower, florets
1 bunch bok choy, cut into bite size
2 fried eggs, cut to bite size
1/2 packet thinly sliced black fungus, soaked in hot boiling water for 30 minutes
1 canned sliced pork, about 210 g
3 Tbs oil
1 Tbs minced garlic
125 ml water, plus extra 15 ml
3 Tsp chicken powder stock
1/2 Tbs oyster sauce
2 Tsp soy sauce
1/8 c chicken stock
2 Tsp salt, extra
1 1/2 Tsp pepper, extra

Method

Mix well 125 ml water with chicken powder stock, and set aside. Soak vermicelli in hot boiling water until softened and drained. Then marinate with soy sauce for colouring. Set aside. Heat oil in wok on medium heat. Brown garlic for 1 minutes. Add carrots, thinly sliced black fungus and cauliflower florets cook for 3 minutes. Then add green beans, bok choy and mix well cook for 3 minutes.

Next add chicken powder stock mixture, salt, pepper, vermicelli, leftovers fried eggs, 1/8 c chicken stock, stewed pork sliced cut into bite size with the fat oil that comes with it in the canned. Cook for 5-8 minutes and stir to mix well everything with spatula and a pair of chopsticks or tong. Now add 15 ml water, oyster sauce and soy sauce, toss to combine well. Check seasoning and serve with a glass of white wine.
