Today, I am trying tapioca flour to bread prawns. I bought 8 cocktails prawns with tails, garlic bread, and lemon and herb breadcrumbs. My crumbed prawns don’t look as good as the recipes I see online. I wonder what I did wrong. I found 3 more recipes using tapioca flour and decided to give them a try.
Google: “Breadcrumbs are small pieces of leftover bread. They can be light brown or pink and have a sandy texture when dried. Fresh breadcrumbs are crumbly. Usually made from toasted bread, they help absorb moisture in recipes and help bind ingredients together. Whole wheat bread, which is high in fiber, can aid digestion and help control blood sugar and cholesterol levels, as well as reduce hunger.”
Google: “Tapioca is typically available as flour, pearls, or coarse flakes. Its flour is similar to cornflour, while the pearls resemble large couscous. The smell and taste of cassava flour can be described as sour or musty. Tapioca flour is useful in cooking because it thickens quickly, has a neutral flavour, and gives sauces and soups a smooth texture. Some believe it freezes and thaws better than cornstarch or regular flour, making it a good choice for baked goods meant for later use. This flour is often combined with other flours in recipes to enhance nutrition and texture.”
This my simple quick and no green lunch. Let’s get prawns in the air fryer!!!
Ingredients
8 prawns cocktail with tails on
2 eggs
65 g tapioca flour
50 g lemon and herb bread crumbs
1/2 Tsp paprika
1/2 Tsp garlic powder
1/2 Tsp onion powder
salt
black pepper
spray oil
a splash of water
3 pieces bought garlic bread
Method
Bring out the bought garlic bread from fridge to benchtop, take 3 pieces out the rest back into fridge. Line double layer foils on the flat metal holes, making sure foil doesn’t fly up to the heat element. Then place the flat metal hole into the air fryer secured. Preheat the air fryer at 180 degrees C for 5 minutes. Wash the prawns, dry them with paper towels, and place them on a paper towel-lined plate. Refrigerate for 10-15 minutes. Line a baking tray that fits in the air fryer with foil, spray it with oil, and set aside for the prawns.
When air fryer is heated, bring out the cup, put 3 garlic bread pieces into the foiled flat metal holes and air fry at 180 degrees C for 6-7 minutes until garlic bread is golden brown and the butter inside is all melted. Remove the garlic bread from air fryer and transfer to a plate.
Bring out the prawns from fridge, let it sit on benchtop for a while. Now prepare the coating for the prawns. The fist the bowls, add the tapioca flour, paprika, garlic powder and onion powder. Season with salt and black pepper. The second bowl, add the breadcrumbs. The third bowl, add the eggs and a splash of water and beat until combined.
Dip each prawn into the tapioca flour, then the egg, then the breadcrumbs using food clippers. Ensure each prawn is fully covered in bread crumbs. Put 8 crumbed prawns in the baking tray without overcrowding. For quick and even cooking, make sure you air fry crumbed prawns in a single layer. Depending on the size of your air fryer, this will require at least 2-3 batches.
Lightly spray the tops with oil. Place the tray in the cup of air fryer and set it to 190 degrees C, for 4 minutes. After 4 minutes, flip crumbed prawns, spray the other side with oil and return to the air fryer for 3 minutes. When done remove the baking tray from the cup of air fryer. Transfer cooked crumbed prawns to the plate with cooked garlic bread. Enjoy!!!!
