Air fryer potato chips crumbed prawns

Since my last attempt at making crumbed prawns wasn’t perfect, I decided to try again. I looked up about 20-25 crumbed prawns recipes. This particular method uses potato chips and lemon juice instead of flour and eggs. I enjoy experimenting with different ingredients, so I’m using uncooked prawns with the tails intact.

I bought 18 prawns as I don’t want to waste them if they don’t turn out crispy. I’m going to set my air fryer to 200 degrees C, as most recipes do, and cook them for 6-10 minutes based on various recipes. Their pictures look great. What do I have to lose by trying? Everyone has different air fryer models; mine is a Smith & Nobel 7 L.

Google: “Breadcrumbs are made from leftover bread that is ground into fine crumbs. They can be light brown or pink and have a sandy texture when dried. Fresh breadcrumbs are more crumbly. Usually, breadcrumbs are made from toasted bread; they help absorb moisture in recipes, which aids in binding. Bread, especially whole wheat bread, is high in fiber, and eating it can support digestion. This in turn helps control blood sugar and cholesterol levels, reducing the need to eat frequently.”

I added flour because I want my prawns to be crispy. I noticed that Italian recipes don’t use panko bread crumbs, but they still make crispy prawns. Some recipes do use them, so I will try panko bread crumbs like in the Sicilian recipe. I’m glad I tried this method, even though my potato chip-crusted prawns don’t look as good as the original. Keep learning from my mistakes, and one day they will be perfect. Let’s use potato chips for crunchier prawns!!!!

Ingredients

18 prawns, shelled and tail intact
200 g lemon and herb bread crumbs
8 Smith’s chili crinkle cut potato chips
1 lemon juice
2 Tbs plain flour
1 Tbs olive oil
salt
black pepper
spray oil

Method

Wash the prawns, dry them with paper towels, and place them on a paper towel-lined plate. Refrigerate for 10-15 minutes. Meanwhile, line a baking tray that fits in the air fryer with foil, spray it with oil, and set aside.

Add flour, lemon juice, salt and pepper into a large bowl and beat until smooth. Add prawns in to the prepared lemon mixture and stir until evenly combined. Then crushed potato chips and add to the prawns mixture and mix to coated.

Now add bread crumbs and oil, mix well again. Set aside for 10-15 minutes. Ensure each prawn is fully covered in bread crumbs, to help it adhere well and give a nice crunch. Preheat air fryer at 200 degrees C for 5 minutes. Place half the potato chips crumbed prawns into the prepared lined baking tray without being overcrowded. Spray oil on to the prawns. Place in the cup of air fryer, then into the machine.

Roast until golden and cooked through for 8 to 10 minutes. Halfway through, after 5 minutes, Stop, take out the cup, and turn the prawns over and spray any dry spots with oil. Return the cup to the machine and continue roasting until cooked.

Then transfer to a plate and keep warm under foil. Repeat the process with the remaining batch. Serve with spicy sriracha and or mayonnaise and with a cold beer!!!

Note: Cooking time might vary depending the size of your prawns. Using hands, make sure to press bread crumb mixture well on both sides of the prawns to help it adhere well and give a thicker coating. You can use panko bread crumbs, it will be more crispy as I had seen on all the recipes I browsed.
