
Meal for one
Saw a post on pasta frittata from Basilicata. I had changed the ingredients and cooked in a square saucepan. Google: “What does the word frittata mean? There is an Italian expression ‘hai fatto una frittata’ which more or less means you have made a mess (figuratively or literately!). Perhaps, the expression came into being when a frittata was merely a way to use up whatever leftovers were in the fridge and not actually considered a culinary delight!”
I had used vermicelli pasta as the same with the linked at the bottom, added 3 eggs, Italian seasoning and chopped salami. As usual I must have chili flakes. Can’t go without chili. This is another experimenting cooking pasta with egg mixture and it’s a perfect dish to add to your breakfast and it works really well for a light breakfast or lunch paired with cherry tomatoes. I am glad to try cooking pasta in a square saucepan rather than a round saucepan. I cut down the amount of cheese. My recreated pasta frittata from a food blogger. Her recipe link is attached at the bottom. My pasta salami looks like a square bread, beautiful comforting, spicy for my taste bud and delicious. Let’s cook pasta in a square saucepan!!!
Ingredients
2 balls of vermicelli pasta
3 eggs, beaten
4 cherry tomatoes
1 Tbs minced garlic
4-5 slices of salami, diced and divided
chili flakes, divide
40 g Parmesan Pecorino
black pepper
oil
butter
water and salt for cooking vermicelli
Method
Cook vermicelli pasta in a pot of boiling salted water until just al dente. Drain and let it cool. In a pan heat 1 Tbs oil and 1 Tbs butter over medium heat. Add garlic, some diced salami, chili flakes and cook until garlic softens and diced salami is cooked about 25 seconds, not to burned garlic.
In a large metal bowl combined the cool cooked vermicelli pasta with garlic mixture. Then add in beaten eggs and some cheese into the pasta garlic mixture bowl. Season with pepper. Mixed well. Add some more oil and butter to the square saucepan on medium heat. Spoon pasta garlic egg cheese mixture into the heated saucepan.
Cook until bottom side is golden browned and slightly crispy. Then be careful flip the frittata over to cook the other side until golden browned and crispy. Plate up onto a plate, sprinkles some salami and chili flakes. Serve with cherry tomatoes. Enjoy!!!!
Note: You may add tomato sauce, salad and bacon, sausages or chips. Increase the amount if you have a bigger saucepan. You can cook on an air fryer the linked of my air fryer is attached at the bottom.
