Mayo spam mushroom udon noodles soup

Saw video somewhere on cooking peanut butter packet instant ramen and I have tried it with pan mee with its flavour sachets. Today, I have Udon noodles packet, I decided to try it using the idea from the peanut butter with packet pan mee. Swapping peanut butter for mayonnaise, added 1 egg, and chili powder, so that I can called it my own.

My sister said it’s weird dish. I told her as long as it didn’t kill me, I am daring to try. Well, if never try you might miss out the flavour of the noodles. My additional ingredients are sesame oil, minced garlic, cooked spam meat, mushrooms slices, black sesame seeds, spring onion and must have chili sauce.

I am glad to try with mayonnaise, though my egg split. My trial and error experimenting did give me a comforting, colourful, spicy, hot and delightful meal to enjoy in this extreme cold day. Let’s cook!!!

Ingredients

I packet Udon, fresh or vacuum-sealed
1 egg
1 stalk spring onion, green part only, cut to bite size
2 pieces cooked spam meat
6 slices white mushrooms
6 slices Swiss mushrooms
1 Tbs minced garlic
1/2 Tsp chili powder
1 Tsp sesame oil
300 ml hot boiling water

Garnish

black sesame seeds
chili sauce

Method

In a bowl, beat sesame oil, chili powder, garlic minced, mayonnaise and raw egg. Then in the small pot, add water, bring it to a boil. Add udon to the boiling water and stir to prevent sticking. Cook until Udon is tender but still have some resistance (al dente); cook for about 3–4 minutes.

Drain the noodles; reserve the hot water. Rinse them under cold water to stop the cooking process and remove excess starch. Transfer Udon to the bowl with mayonnaise egg mixture and mix well. Turning udon over 3-4 times in the mayonnaise egg mixture.

Pour back Udon mayo egg mixture into the small pot, add both the mushrooms slices, spam meat pieces, spring onion. Then add back the reserved hot boiling water into the pot, cook a further 2-3 minutes; to warmed up the spam meat pieces.

Switch off hob. Scatter the black sesame seeds over the Udon noodles. Squirt some chili sauce over. Enjoy!!!

Note: Learnt from one of the posts saying: “Don’t just pour all the water you used to cook the noodles into the bowl or it will cook the egg.” You can use ramen with condiments, or any noodles of your choice. You can garnish and add extra ingredients. Just make sure you cook them through.
