Egg tomato bread with cherries tomato

Today, I am sticking to my budget and make the most of what I have in my fridge, and kitchen. This Winter, is extra cold don’t feel like going out for groceries. That’s why I always make sure I have canned, dried, and frozen food. Took down my frozen bread to thawed in fridge overnight.

My simple healthy, budget lunch are done under 15 minutes. No hassle of a lot of utensils to wash and also saving water bill, as well as gas. Let’s cook!!!

Ingredients

4 cherries tomatoes
3 eggs, lightly beaten
2 slices of bread
2 plum tomatoes, chopped to bite size, divide
1/8 c milk (OPT)
2 Tbs butter or proactiv margarin
Italian seasoning
oil
black pepper
salt

Method

Heat a sauce pan with butter and oil on medium heat, until butter melted. Cracked eggs onto a deep plate, lightly beaten with milk. Add chopped tomatoes, season with Italian seasoning, salt and pepper. Dunk the bread into egg mixture, let it soak in the egg mixture. Spoon the soaked bread onto the heated butter oil pan. Cook until brown and cooked; pressing down with spatula before flipping over to the other side. Cooked until brown and cooked; pressing down with spatula. Removed to plate, scatter some chopped tomatoes. Repeat with the second slice of bread.

Once done cooked, transfer to plate, place it on top of the first bread. Then scatter remaining chopped tomatoes over it and put 4 cherries tomatoes around the bread. Enjoy with a cup of coffee or tea!!!!
