
I saw how to make egg rolls online but can’t remember the site. I love to explore and experiment with my own ingredients. My motto is that if you never try, you’ll never know what you can create, and in this case, it’s about taste, colour, and a satisfying meal.
Well, this is my first time trying out. It’s not as perfect as the website: round rolls. It could be the ingredient differences. My 2nd motto is the more you practice; the better it will get. Never give up, whatever lies ahead; use them to your utmost abilities.

Gherkins are small, sour pickled cucumbers. They are a good source of vitamin K for blood clotting and bone health, potassium: help prevent muscle issues and fatigue, and probiotics: support gut health and digestion. Contain antioxidants: protect against cellular damage and inflammation. Being mostly water, they help with hydration. Commonly used as a condiment on sandwiches, burgers, and salads, and can also be eaten as a snack, with their tangy flavour enhancing various dishes and refreshing the palate.

Ingredients
3 large eggs
4 streaky smoked bacon, cut into bite size, reserve some for garnish
1/2 gherkin, diced
2-3 Tbs milk (OPT)
1 Tsp minced garlic
salads
salt
pepper
chili flakes

Method
Heat oil in a saucepan and add streaky bacon. Toss around for about 1 minute, just to bring out the fats and warm it up. Set aside. Next, crack the eggs into a bowl and add milk if using, then season with salt and pepper. Lightly beat them to combine. Set aside.
Heat oil in a small square pan on low heat. Once the oil is hot, use a small ladle to pour some egg mixture onto the square pan and scatter the minced garlic over the egg mixture. You need a thin layer of egg mixture. Let it cook for about 2 minutes until the thin layer has thickened slightly.
Using spatula, flip/roll motion the thin layer cooked egg from in front of you to away from you. Brush some oil near you. Gently push the egg back toward you. Brush some oil on the empty spot. With one hand using spatula lift a little bit the roll/parcel. Then with the other hand; ladle some more egg, pour onto the part of pan without egg and tilt the pan so the egg mixture flow under the lifted egg. Now scatter streaky bacon onto the egg. Let it cook for about 2 minutes until the thin layer has thickened slightly.
Using spatula, flip/roll motion the thin layer cooked egg from in front of you to away from you. Brush some oil near you. Gently push the egg back toward you. Brush some oil on the empty spot. With one hand using spatula lift a little bit the roll/parcel. Then with the other hand; ladle some more egg, pour onto the part of pan without egg and tilt the pan so the egg mixture flow under the lifted egg. Now scatter gherkins onto the egg. Let it cook for about 2 minutes until the thin layer has thickened slightly.
Repeat the process until the egg mixture is finished. If you can get them into a roll, that’s great, or like mine: a parcel. Switch off the hob. Gently lift the cooked egg roll/parcel onto the middle of a serving plate. Place salads on each side of the cooked egg roll/parcel. Scatter some more streaky bacon and chili flakes on top. Enjoy!!!
