Garlic bread egg roast chicken and vegetables

Bought slices garlic bread and roast chicken as I don’t want to spend a long time in the kitchen. Anyway, I have eggs and vegetables. Thought I should have some colour in my plate to cheers me up.

This is my weekend, simple creative meal. All I needed is to bake the garlic, cook egg and vegetables, chopped the whole chicken into pieces. Store the rest of the chicken and garlic bread for another day. My quick weekend lunch is delicious. Let’s cook and eat. Then go out clear the leaves from my garden.

Ingredients

1 sliced garlic bread, bought
1 egg
2 small carrots, sliced
3 cherries tomatoes
3 pieces roast chicken, bought
hot water, to boil
oil
salt
pepper
chili flakes
chili sauce

Method

Preheat oven to 180 degrees C. Place garlic bread on baking tray. Cook for 5-7 minutes until crispy. Bring a pot of hot water to simmer, then add in the sliced carrots and cook till tender about 5 minutes. Drain and plate up opposite each other on the plate. Chopped chicken into pieces. Store the remaining in an airtight container. Place roast chicken on top of the plate. Put 1 Tbs oil in a small pan, cook until white is cooked and yolk is soft a bit running, sprinkles salt and pepper to taste.

Once garlic bread is cooked. Place it in the middle of the plate. Top with egg. Then sprinkles chili flakes over the egg. Squeeze chili sauce over carrots. Place cherries tomatoes at the bottom. Enjoy!!!
