
Bought koay teow instant packet and fish cake on sale. Got leftover cooked bok choy with garlic. Felt very tired and full from my outing lunch with my friends. Well had to eat something light as I don’t like waking up in the middle of the night looking for food. Eat the instant packet noodle in moderation. Don’t worry, I have written the bok choy recipe below.

Ingredients
Bok choy with garlic and shallots
2-4 bunches bok choy
1 Tbs garlic minced
oil
1 Tbs Shao Xing Chinese cooking wine
salt
pepper
fried shallots, garnish
Koay teow (instant packet)
1 packet instant koay teow
6-8 slices fish cake
water
leftover cooked bok choy
Method
For you cook the bok choy first
Cut the end of bok choy, and cut to bite size. Wash and dry with towel. Set aside. Heat 2 Tbs oil in saucepan on medium heat. Once heat, add minced garlic, cook for 25 seconds. Then add the stems of bok choy cook for 2-4 minutes. Next add the leaves, cook a further 5-8 minutes. Then add in Shao Xing, salt, and pepper; toss around for 1-2 minutes. Then spoon onto a serving plate. Garnish with fried shallots.
Then the instant noodle
Put kettle on. Open the packet and the condiments that come with it. place into a bowl. Once water is boiled, pour some hot into the prepared koay teow with condiments and sliced fish cakes. Put into the microwave, microwave on high for 6-7 minutes, depend on the microwave power: 1100 watts.
Then add in the bok choy that you have cooked earlier. For me: Before placing my koay teow and condiments into the microwave. I spoon the leftover cooked bok choy which I bring it out onto the benchtop to come to room temperature. Then microwave them for 6-7 minutes. Once koay teow is soft and cooked, bring out from the microwave. Enjoy with a glass of white wine!!!
