Roast chicken pieces salads eggs rice with chili sauce

Meal for one

Went for lunch with friends and after lunch each of us bought roasted chicken on sale. I have leftovers salad, rice and I just fried two eggs to go with bought roasted chicken. The remaining chicken pieces that I had cut up and cooled; place in an airtight freezer container, label and date when bought.

Nowadays, the whole uncooked chicken can be expensive. My family loves to buy ready-roasted chicken. We save on electricity to roast and marinade rubs on chicken. All we have to do is chop it into pieces and serve with a side dish of vegetables and, at times, eggs. That’s our complete meal.

Today I only need to fry the eggs. Let’s cook the eggs and sit down to watch The Mummy Returns.

Ingredients

Bought

1 whole roasted chicken
1 packet rocket and spinach

Fry egg
2 eggs
2 Tbs oil
salt
pepper

Garnish

chili sauce
oil
salt
pepper

Method

Removed roast chicken from plastic bag onto chopping board. cut into pieces. Take one drumstick and two pieces of roasted chicken put on a bowl. Set aside. The rest leave to cool and pack into container, write the name and date bought. Place into freezer.

Fry egg

Heat a saucepan on medium-low heat and add 2 Tbs of oil. Once oil is hot, crack the two eggs into the pan, give some space between them. Season with salt and pepper immediately after cracking into the pan.

Cook for about 2-3 minutes until whites are set. Keep the heat low to avoid burning the bottom before the yolk is cooked through. Now gently flip with a spatula, pierce a few big holes on yolks for faster cooking, and fry for another 2-3 minutes until completely firm. The egg is done when the white is fully opaque and the yolk feels firm to the touch. Switched off hob. remove the pan from hob. Set aside

Assemble

Using the bowl with the chicken pieces, place enough rice in the centre next to the chicken pieces. Heat in microwave for 1-2 minutes until rice is heated hot. Then place the two eggs on top of rice opposite the chicken pieces. Now pile up some salads and drizzle some oil, season lightly with salt & pepper, and my favourite chili sauce over the salads, eggs make chili in strips and dollop some over the chicken pieces. Enjoy with a glass of white wine!!!
