Spicy tofu preserved olive leaves and lettuce

Bought silken tofu and have preserved olive leaves. Also found some leftovers lettuce and tom yum paste in my fridge. I just got to have spicy food almost every second day. Today, I am just cooking a simple dish to go with rice.

“Chinese preserved olive leaves are a condiment made of olives, preserved mustard vegetables, salt, and oil. It contains a very high amount of umami flavour and is most commonly used in fried rice, stir-fries, or as a condiment (it’s especially good mixed in with congee). It is slightly salty and has a deep earthy olive flavour. It contains an abundant amount of umami-ness and is very delicious. Since they are not as salty as regular olives, they can be used in larger amounts to flavour dishes. Once opened, you can store preserved olive leaves in the cool and dry pantry for 4-6 months but check the expiry date as well.” My simple tofu dish is quick, spicy, comforting, and delicious. Ingredients

1 block about 250 g silken tofu
4 lettuce, cut into strips
1/8 c vegetables stock
1 Tbs minced garlic
1 Tbs tom yum paste
2-4 Tsp sesame oil
2-4 Tsp preserved olive leaves

Method

Open the block of silken tofu, wash and rinse under the water, drain off the water. In a microwave save plate, add tom yum paste, stock, lettuce, minced garlic and sesame oil, stir to coat lettuce and mixed well. Microwave it for 2 minutes. Bring out of microwave.

Cut the silken tofu into big cubes and place into the hot lettuce sauce. Spoon some of the sauce over the silken tofu. Microwave the silken tofu for 5 minutes. Remove from microwave and scatter the preserved olive leaves around it. Serve immediately with rice and Tsing Tao beer. Enjoy!!!!
