
Soup for one
Have not had soup for a while. Discovered that I have 2 small potatoes that had roots coming up. Thought best use it before the flesh of potato turns bad not fresh anymore.
Google: “Russets or all-purpose baking potatoes are high in starch and low in moisture. In soups, they will soak up the liquid and lose their shape. This makes them the ideal choice for making creamy soups or thickening a runny soup.” Hmm!!! My potatoes are not Russets just white clear skin potatoes. Will try it as I am daring to create using different potatoes.
“What is potato soup made of? There are onion, carrot, celery, and potatoes that get cooked down in the tiniest bit of bacon grease. Then goes in chicken broth, some flour and milk, and eventually heavy cream. There are some salt, pepper, and Cajun seasoning, too, for flavour. To serve it, you sprinkle on some crispy bacon bits and shredded cheese!
Today very simple creamy, a few ingredients for the soup. My ingredients are potatoes, water, butter, milk, cheese, salt and lots of black pepper. I am glad it turned out perfect creamy, comforting, and delicious. Let’s cook!!!!
Ingredients
2 small potatoes
3 Tbs butter
3/4 c milk
1/8 c water
Pecorino Parmesan cheese
salt
black pepper
water, for boiling potatoes
Method
Peel the potatoes skins, cut into small cubes and add into pot with enough water to boil the potatoes until softened about 15 minutes. Drain the water off. Then place potatoes, and 1/4 c milk into Nutri Bullet. Blend until smooth, if too thick add 1/8 c water and blend again.
Next empty the pureed potato into the same pot, add the remaining milk in and cook stirring often for about 5-10 minutes until milk bubbling. Then add in butter, stir to mix well. Season with salt and lots of pepper. Now add in cheese, stir until potato soup is creamy and cheese melted. Remember pecorino cheese is salty so try not to put too much salt. Once cheese melted, soup looks creamy, off hob. Spoon soup onto bowl, add some black pepper and serve with bread. Enjoy with a glass of Moscato.
