Blueberry jelly

I found a small can of gelatine hidden behind all the tall goods in my pantry. I look at the expire date and it showed that it will expire in a week. As you would have known me: I don’t like to waste food. Luckily, it’s enough to make this jelly and another.

Jelly, the wobbly fruit dessert that is a staple at birthday parties, has traditionally not been suitable for vegans as it contains gelatine. I use my mom gold bar jelly moulds. This is a simple and great dessert to serve at party, birthday celebration or after dinner. It can be packed to picnic but do carry it in a cooler bag. Let’s cook!!!!

Ingredients

10 g gelatine
4 g instant clear jelly powder
160 g castor sugar
1000 ml water
1 Tsp vanilla extract
80 g blueberries

Method

Grease the gold jelly moulds with oil and put 4 blueberries into the gold bar moulds. Set aside. In a bowl mix sugar, gelatine, and instant clear jelly powder well. Bring water and vanilla extract in a big pot to boil with sugar mixture, until foams floating up and sugar dissolved. Remove foams.

Pour into a jar for easy to pour into the moulds. Let it sit in room temperature for 5 minutes before transferring to fridge to set for 2-4 hours or overnight. Once set removed it to plate. Enjoy with coffee, tea or dessert wine.
