White curry mee soup with vegetables

Went to Chinatown for lunch with some friends. After lunch we went to a nearby Asian groceries shop. Found White Penang curry mee. Bought 5 packets and inside there are 5 individual packets. Yesterday, I cook mixed vegetables. I didn’t get any vegetables from Asian groceries. I should have bought tofu pok, fish cakes and watercress as they would go well with white curry mee.

“Penang White Curry Mee is a Malaysian noodle dish known for its rich, creamy, and pale-coloured broth, distinguished from traditional curry mee by its lack of curry paste pre-mixed into the soup. It features a, often spicy, sambal served on the side, allowing diners to mix the intense chilli paste into the delicate, coconut-based soup. Milky-white and savoury, made with coconut milk (or milk) and spices like lemongrass. Typically a mix of yellow noodles and vermicelli, served with prawns, blood cockles, cuttlefish, and tofu puffs.”

As long as I have a decent meal, I am contented. I like to explore the flavours and various ingredients to go with my white curry mee. I have written down mixed vegetables recipe at the bottom for you. My meal is colourful and creamy spicy but not as spicy as I would like them to be, flavourful and delicious. Let’s cook!!!

Ingredients

Mixed vegetables

6-8 carrots, cut into bite size
3 zucchini, cut into bite size
1 medium broccoli, florets
1 medium size cauliflower, florets
2 canned baby corn, wash and drain dry, cut into halves
100-120 ml vegetables stock
1 1/2 Tbs minced garlic
oil
butter (OPT)
salt
pepper

White curry mee
1 packet white curry mee, instant
water

Method

Mixed vegetables

Heat oil and butter in a big saucepan until hot. Then add garlic cooked until fragrant about 1 minute. Add carrots, broccoli, vegetables stock and cauliflowers cook for about 3-4 minutes until soft. Next add in zucchini cook until tender about 2-3 minutes. Lastly, add in baby corn and cook about 3 minutes.

Season with salt and pepper to taste. Once vegetables are cooked transfer to two plates. Note: you can serve with rice, and a meat dish. But for this recipe serve with white curry mee..

White curry mee

Put the kettle on. Empty the white curry mee instant packet and condiments into a bowl. Place a plate under the bowl for easy to carry later when the soup is hot. Pour enough hot water over the white curry mee and condiments, and stir to mix well. Microwave the white curry mee for 5-7 minutes. When the mee is softened and cooked. For you: spoon enough of mixed vegetables into the white curry mee bowl. Serve immediately with a glass of white wine!!!

Note: for me: I have leftover I warm up enough of mixed vegetables separately. Then spoon the warmed up mixed vegetables into the cooked white curry mee soup. Stir to mixed well. Serve with a glass of white wine.
