Rump steak is not on sale; I bought the smallest piece. Went to get it and this kraft cheese caught my eyes. Usually I would get cream cheese, ricotta cheese or mascarpone cheese to bake cake. I am daring to try and make use of it. I found bitter gourd is on sale, so I bought it to go with steak and kraft cheese. I have 2 leftover potatoes and got 3 eggs from my mom as I forgot to get them.
Google: “Bitter melon — also known as bitter gourd or Momordica charantia — is a tropical vine that belongs to the gourd family and is closely related to zucchini, squash, pumpkin, and cucumber. It’s cultivated around the world for its edible fruit, which is considered a staple in many types of Asian cuisine. The Chinese variety is typically long, pale green, and covered with wart-like bumps. On the other hand, the Indian variety is more narrow and has pointed ends with rough, jagged spikes on the rind. In addition to its sharp flavour and distinct appearance, bitter melon has been associated with several impressive health benefits.”
“Bitter melon is especially rich in vitamin C, an important micronutrient involved in disease prevention, bone formation, and wound healing. It’s also high in vitamin A, a fat-soluble vitamin that promotes skin health and proper vision. It provides folate, which is essential for growth and development, as well as smaller amounts of potassium, zinc, and iron. Bitter melon is a good source of catechin, gallic acid, epicatechin, and chlorogenic acid, too — powerful antioxidant compounds that can help protect your cells against damage.”
My meal is simple, healthy and delicious. Let’s cook!!!
Ingredients
Bitter gourds with eggs
1 medium size bitter gourd, cut lengthwise, scoop out the light green skin and seeds, wash, dry and sliced
3 eggs, lightly beaten
1 Tbs oil
1 Tbs garlic minced
1 Tsp fish sauce (OPT)
1 Tsp soy sauce
salt
pepper
Rump steak
1 rump steak
1 packet slice kraft cheese
salt
black pepper
oil
Boil baby potatoes
2 baby potatoes
Method
Boil baby potatoes
Wash the potatoes and remove any dirt. You don’t need to peel them if they are new potatoes. I didn’t peel my potatoes even though they are old about 10 days or so. Place the potatoes in a pot and cover them with cold water. Add about a tablespoon of salt to the water. Bring the water to a boil over high heat, then reduce the heat to medium-low to maintain a gentle simmer.
After about 10-12 minutes, start testing the potatoes with a fork or knife. They are cooked when the fork or knife slides in with little resistance. Drain the potatoes in a colander. If you want to add butter or herbs, do so immediately while they are still hot.
Bitter gourds with eggs
Meantime, potatoes are boiling. Heat a saucepan on medium heat. Add oil when the pan is hot. Toss in garlic and cook for 1 minute. Then add in bitter gourds and cook until softened. Next, add in eggs, fish sauce, soy sauce, salt, and pepper. Mix well. When it’s cooked, check the seasoning and then spoon out onto a plate. Set aside and cover with foil to keep warm.
Rump steak
Preheat oven to 230 degrees C. Pat rump roast dry and season with salt and pepper. Put rump steak in baking tray and then place into oven; roast for about 10-15 minutes. Reduce temperature to 130 degrees C, for medium rare rump steak and now add a piece of the slice kraft cheese on top of rump steak. Continue roasting rump steak for 2-3 minutes until cheese melted. Remove rump steak and let it rest on the tray.
If bitter gourd eggs and potatoes have gone cold, place in the hot oven while rump steak rest. Once rump steak rested for 5 minutes up. Be careful it is hot use gloves to bring out the bitter gourd egg and potatoes. Then plate up bitter gourd eggs on the top left side of plate followed by potatoes and rump steak at the bottom. Enjoy with a glass of red wine.
