
Bought mortadella, egg, cheese, and onion at Aldi. Got some leftover bread. Found a bottle of BBQ sauce right at the back of my pantry cupboard. No chili sauce today.

My simple, healthy lunch is delicious though I would love to add chili sauce; however, today for a change of taste; add BBQ sauce. Let’s cook!!!
Ingredients
2 slices of bread
2 sliced mortadella
2 cheddar cheese
4 eggs, lightly beaten
1 small onion, sliced
salt
pepper
BBQ sauce, bought
butter
oil
Method
Heat a saucepan over medium high heat. Add 1Tbs of oil and 1 Tbs of butter, and cook until the butter melts. Season the beaten egg with salt and pepper, then pour it into the pan. Cook for 2 minutes, then add the onion and cook for another 1-2 minutes until the eggs are set and the onion softens.
Flip over half and press down for 20 seconds. Flip the other side and press down for 20-30 seconds until cooked to your liking. Once done, turn off the hob and move the saucepan away.
Put two slices of bread in the toaster. When they pop out, spread butter on them. Add cheese on top of each slice, then place folded mortadella on top. Cut the cooked eggs into quarters, scoop two pieces, and add them on the mortadella. Drizzle with BBQ sauce and enjoy with a cup of tea!
