
My father’s friend gave him a bottle of cognac. He gave me some. I searched for recipes on marinating rump steak with alcohol. Google: “Yes, you can marinate rump steak in cognac, and it can be a delicious addition to your marinade recipe. To ensure the best results, it’s recommended to marinate rump steak for 1-2 hours, but you can also marinate it for up to 12 hours.”

Alcohol is versatile in cooking; it not only adds flavour but also tenderizes meat in marinades or creates glazes and sauces when cooked down. Cognac can change meat’s colour by breaking down proteins and oxidizing myoglobin, the protein that gives meat its colour. A raw steak will turn brown as it cooks.“

Trusting God to help me using cognac on my rump steak and cooking in an air fryer. My rump steak is brown, healthy, peppery, and delicious. Served with coleslaw and leftover celeriac sauce. Let’s air fryer; trust in God!!!
Ingredients
Rump steak and coleslaw
1 rump steak
5 Tbs cognac
1/2 Tbs minced garlic
1 stalk rosemary
8 Tbs oil
salt
black peppercorns
1 packet coleslaw, bought
Method
Marinade rump steak in cognac
Use a metal skewer, prick holes all around rump steak both sides. Place steak in a deep metal plate and add rosemary, oil, salt, black pepper and cognac. Press steak into rosemary, oil, salt, black pepper and cognac and flip over repeat pressing into marinade. Cover with cling wrap and let it sit in fridge for 2-4 hours.
Thawed rump steak
After marinated time up, bring out rump steak from fridge to thawed to room temperature about 45 minutes. Removed cling wrap; then season both sides with extra 2 Tsp salt and 1 Tbs black pepper. Allow the steak to absorb salt and black pepper for 20 minutes.
Meantime, heat air fryer for 5 minutes at 200 degrees C. After 5 minutes, bring out the basket, lined it with air fryer baking tray. Remove rump steaks from deep metal plate. Place rump steaks into the baking tray, and put back the basket into the machine.
Cook rump steaks for 6 minutes. Turn rump steaks and cook for a further 2 minutes. At this point, rump steaks should be rare to medium rare. Cook for a further 2 minutes for medium rump steaks, plus 2 minutes more if you prefer them well-done. Remove the steak and allow to rest for 10 minutes with tented foil.
Coleslaw salad
Wash and spin dry using salad spinner if you have one or pat dry with paper towel. Then put into salad bowl. Season with salt and pepper. Spoon some celeriac sauce over the salad and toss to mixed well. Set aside.
Assemble on the long square plate
Using a big ladle, ladle the salad onto left corner of plate. Then place steak at the bottom next to salad. Enjoy with a glass of red wine!!!
Note: It’s still a good idea to rest your steak for a few minutes after cooking in your air fryer because it allows the juices time to redistribute and the muscle fibres to relax. This will mean your steak is consistently moist and more flavoursome throughout.
Saw on google: How long to rest steak after air fryer? “Rest before slicing: As is the case with any steak, you should allow air fryer steak to rest for about 10 to 15 minutes before slicing it. This allows the juices to solidify a bit, rather than running straight out onto your board when you cut into it.”
Saw on google: “Ideally a steak wants to be rested for the same time it was cooking, so if it was cooking for 7 minutes ensure it rests for 7 minutes.”
