Fried eggs and peas diced pork in spinach eggy soup with rice

Got leftovers: some spinach egg soup, diced pork, and cooked rice. Decided to combine them together and cook eggs and peas. I wrote the diced pork recipe and attached a link to the soup below.

Ingredients

Marinade pork

500 g diced pork
1 Tbs Shoa Xing, Chinese cooking wine
1 Tsp soy sauce
1 Tsp sesame oil
1 tsp minced garlic
1/2 Tsp dark soy sauce
1 Tsp fish sauce (OPT)

Cook and thickener for pork

1 Tbs oil
1 Tbs minced garlic
30 ml chicken stock or water
1/2 Tbs cornflour
1 1/2 Tbs water

Fried egg and peas

2 eggs, lightly beaten
120 g peas
2 Tsp minced garlic
1 Tsp mirin
salt
pepper

Method

Marinade pork

Wash and pat dry diced pork. Add pork and marinade into a bowl and mix well, then cling wrap and refrigerate for later about 30 minutes. 

Fried egg and peas

Thaw peas (or rinse under warm water). Beat the eggs in a bowl with a pinch of salt. Heat 2 Tbs oil in a saucepan over medium heat. Once oil is hot, add garlic cook for 30 seconds. Next add the beaten eggs into saucepan. Tilt the pan away from you, allowing the egg to slide toward the edge; cover the saucepan. Let it cook until the bottom is set and the top is mostly cooked but still slightly moist about 1-2 minutes.

Scatter peas all over the eggs and let it sit for 45 seconds. Take a thin spatula and lift one side of the egg. Fold the egg in half by bringing the edge over to the other side. Let it cook for another 35 seconds to 1 minute to seal the fold. Transfer to a plate and set aside.

Cook and thickened pork

Using the same saucepan for cooking eggs and peas. Heat 1 Tbs oil over high heat, add garlic once oil is hot, cook for 30 seconds. Add pork with the marinade in until cooked and pour in chicken stock. Once cooked, pour corn flour mixture: cornflour and water; into the chicken stock and simmer until the gravy thickens. Spoon onto serving plate.

For me : warmed up leftovers spinach eggy soup and rice

Bring out from fridge, the leftover spinach eggy soup and cooked rice onto bench top for 5 minutes. Combined soup and rice in a oval bowl. Warrmed up in microwave for 2-3 minutes. Check that both are heated through. If still cool, add another 1-2 minutes more until hot enough.

Then add in some fried eggs and peas, along with cooked diced pork into hot soup and rice. Enjoy with a glass of white wine!!!

For you: combined them together

Make the soup one day in advance or a few hours earlier. Follow the recipe attached below. Then cook rice. Meantime marinade pork for 30 minutes and place in fridge. Followed by fried eggs and peas. The cook the marinated pork.
