
Bought a can of corned beef, eggs, Swiss cheese and onion on sale. Got chili from my backyard. Felt like having a simple meal but got to have chili in it.

Ingredients
2 slices of bread
1 can corned beef
1 onion, sliced
2 eggs, lightly beaten
3 baby chilies, stems removed and deseed
butter
oil
salt
pepper
Method
Heat 2 Tbs of oil in a saucepan and add onions. Cook until the onions are soft, for about 1-3 minutes. Next, add the canned corned beef to the saucepan. Cook for 5 minutes until it’s heated through and slightly crispy. Season with salt and pepper to taste.
Then add lightly eggs to corned beef onions in saucepan. Chopped the eggs into small pieces. Stir occasionally and cook for about 5-7 minutes or until cooked. Meantime, butter the 2 sliced bread. Place a piece of cheese on one of the buttered bread. The second sliced bread with cooked corned beef egg onion mixture, then place the chili on top. Serve immediately with a cup of brewed coffee.
