Chicken and vegetables in chicken sour cream soup pasta

Felt like having baked pasta. Bought some diced chicken and using the leftovers green beans, asparagus, spinach, medley tomatoes and carrots. I realised that I run out of cream.

I was tempted to use my canned mushroom soup. Then I said to myself best keep for raining day or emergency. Came up with this idea: using sour cream, Italian Seasoning, water, and chili sauce. I am glad it came out perfect creamy, delicious and satisfying to eat. Let’s cook!!!

Ingredients

1/2 box of diced chicken, about 250 g
250g spiral pasta
300 g sour cream
1/2 c milk
4-6 green beans, cut to bite size
4 stalks asparagus, cut to bite size
6 medley tomatoes, halved
3 carrots, cut to bite size
3 Tbs chili sauce
2 Tbs minced garlic
baby spinach
Italian Seasoning
Parmesan Pecorino cheese
oil
salt
black pepper
chili flakes, and some garnish

Method

Preheat oven 180 degrees C. Place green beans, carrots, and asparagus in to the airfryer with steamer basket to steam the vegetables about 10 minutes until vegetables are tender. Do two batches. Then microwave spiral pasta for about 10 minutes. Drain pasta and reserved 1 cup of water. Set aside.

Heat saucepan with 1 Tbs oil on medium heat. Cook garlic until fragrant about 1 minute. Then add diced chicken until it turn slightly white. Removed and transfer to oven deep bowl, add spiral pasta. Beat up sour cream, milk, some Parmesan Pecorino, 1 c reserved pasta water in a jug. Then pour into the deep bowl with spiral pasta and diced chicken.

Next add the vegetables from steamer, spinach and Italian seasoning, chili sauce, chili flakes, salt and black pepper. Toss to mix well everything. Scatter some more Parmesan Pecorino over the top. Place the deep oven bowl into the oven. Baked for about 35- 40 minutes until everything is cook. Removed from oven and spoon onto serving bowls. Garnish with chili flakes and serve with a glass of white wine. Enjoy!!!!

Note: You can use red and green capsicums, mushrooms, tomatoes, or any vegetables of your choice. You can add mushroom canned soup instead of sour cream. You can omit chili sauce just use tomato paste.
